Whole grain muffins

My nutritionist told me I am missing whole grains and good fats in my diet. She told me to add a whole grain muffin for breakfast. Does anyone know of a good healthy whole grain muffin or even a recipe for one ? The best I found had 16g of sugar. I am not resticted by sugar but want to eat healthy. See you lighter. Joanne

I've adapted an old zucchini/pumpkin bread recipe for a few health benefits as well.  Here goes!

2/3c. Omega-3 fortified veg. oil

2 1/2c. Florida Crystals unrefined sugar

4 eggs

16oz. pumpkin (canned or self-mashed)

2/3c. water

3c. unbleached whole wheat flour

4T. clear-mixing, unflavored fiber supplement

2t. baking soda

1 1/2t. salt

1/2t. baking powder

1 1/2t. cinnamon

1t. ground cloves

2/3c. walnuts (or your fave baking nut)

FOR ZUCCHINI BREAD:

Replace pumpkin with 3c. (about 3 med) UNDRAINED grated zucchini AND add 2t. vanilla extract with cloves.

Preheat oven to 350 degrees and oil bottom only of 3 loaf pans or line muffin pans with cups.  Mix sugar and oil until well mixed.  Add eggs, pumpkin, water and mix.  Blend in all dry ingredients, except nuts.  Add nuts after mixing well.  Bake muffins for about 20 min., loaves for 70 min. or until toothpick comes out clean.

I don't have any nutritional info, but my super-picky son loves them and they're totally guilt free because I made them and know exactly what's in them.  I'm sure you could up the fiber or add homemade oat flour.  This is an old recipe that I made my own, so you could certainly do the same!  Enjoy!!
