One fried egg for breakfast?
I am asking this because I live in France currently where most dietitians frown on eggs for breakfast. I wonder if it's mostly cultural, or if they know something I don't (which I don't doubt in many respects).
I tend to have one fried egg on toast 3 or 4 days a week. Never more than 2 teaspoons of oil and one slice of bread (white usually). Is that an acceptable breakfast? I don't eat eggs any other times. My breakfast also includes 1/2 cup of 2% milk in my large coffee (which I sip on all morning) and a piece of fruit or a yogurt which I save as a late morning snack. Good? Bad?
BTW, my labs are good but show a moderate Vit D deficiency (26 ng/ml or 65 nmol/l) , and I'm told egg yolks are a good source of Vit D. I also get a lot more sun these days, eat canned sardines once a week too for that purpose.

It's largely cultural, and it's about the reluctance to eat "heavy" things in the a.m. It's the root of what we in the states call the "continental breakfast" - just a bread and a coffee, that's all they're used to. They like putting their "heavy" stuff on the plate at lunch, which I'm sure you've noticed there in Toulouse. I don't know if it stems from a fear of not "moving" enough during the morning to "need" a real meal, or if it goes back even further to the idea of conserving your money and best foods for the noon meal when everyone's home to enjoy it, going back out in the fields/work and burning it off?
The "most" I've ever witnessed at a French breakfast was a bowl of meusli-type cereal at my friend's place, a family of gourmands, no less. Elsewhere it was always baguette w/jam and a coffee. Period.
There shouldn't be a problem with it, you've got protein requirements beyond the typical person anyway, being post-op. And it sounds ilke you're balancing it out pretty well the rest of the morning.

Having a fried egg everyday shouldn't be a problem unless you have heart disease? You are right w/ the Vit. D content, however keep in mind that the fat, cholesterol and saturated fat in an egg is high. My main concern is that you're frying the egg in oil (adding additional fat, try Pam cooking spray) and also the white bread. Choosing a whole grain bread is a better choice and will stay w/ you longer. Also, I would recommend to try just the egg white (excellent source of protein) or Egg Beater's.

I eat a scarmbled egg 5 days a week for breakfat-sometimes with a little cheese & sometimes plain. I also add 2 small pieces of bacon to this! I sometimes eat a fried egg on the weekend too-
its part of my protein so I enjoy my eggs!
Wow-I wish I were in France! How exciting that seems to me down in hot, yucky Texas!
