MIO muffin in the oven

special for Mary (or anyone else interested in the Atkin flaxseed muffin but not a microwave person:
This version of a MIM is from Willow47 for those of you who do not have mics or would prefer to use regular oven...you could add or subtract ingredients such as the cheese to make the variation that you like...make sure that you rework any carb counts when you change from the original....
I've been doing the following MIO (muffin in oven). We don't have a microwave.
In a pyrex/anchor custard cup:
beat 1 egg
add 1/2 tsp melted butter
add 1/4 tsp baking powder
add 1/4 cup flaxmeal (ground flaxseeds)
Stir until smooth, then
add 1oz of sharp cheddar cheese (or whatever flavor)
Bake 325 F, for 17 minutes. (My oven is a little wonky.)
I usually make the sweet MIM without the cheese plus 1 splenda and 1 tsp cinnamom for breakfast with cream cheese - so good for this much fiber and so few net carbs!

The pancake recipe can be made into muffins too - I'm thinking blueberry muffins for Sunday brunch :-)

Flaxseed is a little seed that needs to be ground (comes pre-ground or not) to release the omega fatty oils. Very high in fiber. Tastes a little nutty. The cinnamon in the breakfast version makes it very muffin-like, but I have made it without the cinnamon and Splenda and it works as a soft biscuit for a sandwichy meal. I especially like it with pork verde (my southwest version of biscuits and gravy, which I miss alot on Atkins) which I was so happy to find out is low in carbs! - The discovery of the MIM and its variations is helping me survive Atkins as I LOVE bread and would not have lasted this long without it!
The MIM has only 3.1 net carbs! That's because it has 14 grams of fiber to offset the carbs in the flaxseed. I buy ground flaxseed in the nutrition department at Fred Meyer or at PCC. The bag is around 7 dollars but it makes one MIM a day for 2 weeks. With the egg in it, it is the perfect breakfast for my Low carb program. I figure I'm breaking even since my previous breakfast was a 270 cal Breakfast Jack (7 point on W.W.) I don't use Atkins products at all. I think they are a manufactured compromise since I'm trying to eat cleaner. I would rather spend my money on a little chunk of low carb dark chocolate from Trader Joes!
My MIM recipe is:
3 Tbl grd flaxseed
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp splenda (or 1 pkt)
mix in small pyrex bowl, add 1/2 tsp butter & 1 egg. Mix again. Microwave 1 minute. I top it with 1 oz of cream cheese, or butter if I don't have cream cheese in the frig.
If I did not want to use the microwave (like Mary) I would try the exact same thing in the oven Baking at 325 F, for 17 minutes. I am thinking about making several in the oven with blueberries for Sunday brunch. That will up the carbs but might be worth it for the flavor.
(14.3 carb, 11.2 fiber, 293 cal, 11.2g is polyunsaturated fat and 5.2 is monounsaturated, the remaining 4.2g is from the butter)

Jan...thank you, thank you, thank you for the MIO recipe! I've always admired the folks who ate alla the different variety of MIMs and now I'm going to have my very own. The cheese recipe sounds delish. Now I just need to find a place that sells the flaxmeal.
Speaking of ovens, why is yours a little wonky? Didn't you just finish your kitchen remodel? I'm picturing you with a gawgus high tech stainless steel oven that is the pride of the neighborhood.

The remodel is just about done - just the detailing and backsplash to go, but I did not replace the appliances. They are only 4 years old. I bought all new white fixtures when I moved in. When I bought the oven, it seemed like a good idea - it is a Westinghouse Accu-bake. It is supposed to only fluctuate temp 5 degrees either way from the setting, not the 25 that most ovens do. But it always seems to be a little slower to get things done than it should. I guess I need to get a seperate temp gauge and check it. I kind of wish I had gotten the convection oven instead - I really liked the one I had in my condo.
did you see the pics of Trueman on my board? He loves his mommy if there is nothing better to do!
I will get the kitchen up there when the backsplash is done - June, I hope.

Ten years ago, when we decided to ditch the microwave, I got a convection oven and we haven't been without one since then. I love mine and it heats things just as fast as a microwave and cooking with it is a dream.
Oh yeah, I saw the pics of Trueman...I left two comments about him. I can see that he definitely rules the roost! I love that...he loves you when there is nothing better to do...at least you can say he loves you, no? Although it looks like he can find all kinds of stuff to get into!
I can't wait to see the pics of your kitchen...I love looking at what other people have done with their houses. Couldn't be that I'ze a li'l nozy!
