I've been MIA because my stupid computer crashed yet again so we are waiting until income tax comes in so we can buy a brand spankin new one! I lost 4 pounds this week! So I'm back down to 299 thank you Lord!! I have some awesome recipes for yall to try unfortunaly its mostly for low calorie/low fat peeps but here ya go!
Orange Spiced Mashed Sweet Potatos
1 1/2 lbs sweet potatos peeled and chopped
1/2 C fresh squeezed orange juice
2 tbsp light butter (from tub not stick)
1/2 tsp pumpkin pie spice, or more to taste ( i didn't meausre just shoo****il it tasted well)
Salt and fresh ground pepper to taste
Now I added two capfuls of skim extra milk so maybe 1/2 oz or 1 oz and I added 2 tbsp of brown sugar so with those it added 35 calories to the entire bowl....let me tell you these are so good my husband couldn't get enough!
Boil potatos until soft, mash with all ingredients and enjoy!
149 calories, 2g protein, 29g carbs, 3g fat (2g sat fat), 8 mg cholesterol, 4g fiber, 124 mg sodium
oh and serving is 3/4 c
I have more I'll post since I'm borrowing my buddys laptop for the weekend but I have to put Brycen down for a nap....post some more in an hour or so

welcome back! that recipe sounds yummy! i would modify it just a tad to suit my diet needs but it sounds great!!! and woo hoo to the under 300!! keep it up girl!

I love raw sweet potato anything...except canned ones! The canned ones are all my mama made for us, so I never knew the difference.
I will try that recipe!!!!
Another one I love to make as a side dish to chicken or pork: thin slice raw sweet potatoes and apples and layer together in a oven dish that has a tight fitting lid. Add a few tablesoons water, teeniest bit of butter, and light sprinkle of brown sugar/cinnamon. Bake for an hour or so depending on size of the dish.
YUM...you can add all kinds of things to his as desired: toasted walnuts on top, orange rind, etc. You could sub the oj for the water and make a variation of yours!
I also love SP thin sliced. boiled a few minutes til not quite tender, then grill (sometimes they need a bit of olive oil or butter)
