I'm single and don't have kids so it IS easier for me to find time in my schedule although when I started doing this, I was working 80+ hours a week and working out daily. I use the weekend to grocery shop and cook food for my meals the following week. I also make it easy - grill or bake chicken and then use that to top a salad, add some greek yogurt and fruit, and I'm done. I know you're on Atkins; maybe Mary has some good ideas on planning for that type of plan. Could you involve your daughter in some of the planning and cooking and that might be fun for her?

I'm assuming that being the fine young follower of Dr. Atkins Diet Revolution that you would not be harboring any illegal ice cream in your home...now wouldga? Nah, I did't think that ya would!
Here's the key to working Atkins. Make sure that you stock up on plenty of everything. Cook meats and have them in containers so that during the week, you don't spend a lot of time on them. So if your ground meat is already cooked, it only takes a few minutes to fix chili. Have plenty of things around that you can just stick in your mouth. I always have boiled eggs, pork skins, diet bars, kosher dill pickles, cheese sticks, cut vegetables, sugar free jello and canned tuna handy. That way if I come in ravenous, I have my own food readily available and don't go after DH's stash. If I can't get fresh vegetables, frozen are easy and nutritious and better for you than canned. Frozen raspberries, blueberries, and stawberries in jello are the bomb with homemade whipped cream. If you cook with onion, and bell peppers, and celery, keep those cut up in the freezer so you can just throw them right in. I keep shredded lettuce, asparugus and black olives in the fridge at all times, mostly because I'm addicted to them! That and cucumber salad. Funny how I NEVER ate salad before Atkins.
The main thing is to do on the weekends whatever it takes to make your life easier during the week. When you are as busy as you can get, that is the time that you need to fuel your body with good food to increase your stamina and brain power. Eating junk will only make you MORE tired and too weak to diet. Let me know if you need any more suggestions.
