I need ideas!!

Hi everyone!
I'm taking a train down to my folks for Christmas, and we're leaving this coming Monday. I'm wanting to stick to my plan, but I'm at a loss of what I can/should bring to eat on the train. It's about an 8 hour train ride, and we leave ~ 2:30pm, which means we'll be on the train for dinner. What can I bring to eat for dinner thats Atkins approved?? Snacks, i'm thinkin an Atkins bar or two (If I can afford them...I have $13. to spend on food for me and my 5 yr old for the trip...) So any ideas are appreciated!! Thanks a bunch!!

I think a frittata would travel well - good luke warm or microwaved. I make a whole one every weekend, slice it up and then pack the individual slices for breakfast or lunch throughout the week. Eggs are affordable, too.

Frittata is the Italian version of a queche - without a crust.
I warm a med size non stick pan on the stove and preheat the oven to 400 degrees while I'm scrambling 6-9 eggs and grating 3-4 oz of cheese. Pour the eggs into the pan, stir a little but not much. Add some chopped vegtables (as much as you want but 1 cup works good), the cheese and some seasoning (I use Mrs Dash, but salt and peper at a minimum) and let a little egg crust form on the bottom of the pan. Then into the oven for 15-20 minutes until firm. Cool and refrigerate. I use 1/6 of the pie for breakfast and it keeps my mornings simple.
I had to find a replacement for a Jack in the Box Breakfast Jack (99 cents) that was fast and easy. This works for me.

Heather, boiled eggs peeled in a ziploc baggy slightly salted. Our Walmart sells individually wrapped string cheese for 25 cents a piece. Other things to put in baggies....sliced celery, pork skins, roasted almonds, but they ain't cheap. Cooked bacon strips, whole black olives, I'll have to think of some more when I have time. I'll edit this post when I think of more.

Cheese was already suggested, but how about some of those Laughing Cow cheese rounds that are coated in wax? They'll travel well while unrefridgerated for a few hours.
I have a friend who did Atkins for a very long time, and she told me you can microwave thin slices of cheese until they turn into crunchy chips. Not sure if some cheeses work better than others (I think she mentioned parmesan??). Has anyone every tried this? Sounds like a nice Atkins friendly alternative to potato chips. Maybe you could microwave some pepperoni slices into crispy chips, too. Sounds too good to be true. How could high fat items end up crispy? My friend swears by it, though.
