Low carb diet question... Help!!!!
I love bacon and I try to always keep it cooked in the refrigerator for salad toppings and wraps. I also hold out the big leaves of iceburg lettuce to use for my wraps. BLT wrap: A tbsp. mayo spread on lettuce with sliced tomato and bacon inside. Just throw in anything you like inside of a lettuce wrap and you have a meal.
I also like to keep Atkins shakes and bars on hand when I don't have a lot of time to cook, but I try to keep things as natural as possible. That way you don't end up with a lot of hidden sugar.
I love eggs, so I don't share your problem. But I know a lot of different ways to cook them so I don't get bored. I was telling Heather last night about omelettes, once you stuff them, you don't even taste the eggs. I make deviled eggs, egg salad, scrambled eggs with cream and bacon bits, omelettes, but my favorite is still fried eggs over medium. I guess I was made for Atkins!

I'm assuming you are in your first phase since your not able to eat oatmeal, etc. Just keep thinking that first phase isn't long and then you can start venturing out a little bit. ...at least it might help your sanity! :)
How about left over dinner from the previous night? Or little wraps, like for example, canadian bacon and cream cheese surrounding a green onion.
I like Mary's idea with the taco salad, that sounds soooo good right now and it's seven in the morning! I'm a big taco fan too though.
Also, how about when you make tacos measure out just like an oz of taco meat and put them in baggies and freeze them. That is what I do, so when I make scrambled eggs I throw the taco meat in there also, sprinkle a little cheese and hot sauce and you got a meal in under five minutes..and it's good!
My SB breakfast I'm hooked on is v8 juice, eggs, and turkey bacon! Can't seem to get enough of it.
