Hi Stacey!

I love stir frys....can use pork or chicken or beef (have even used ground turkey)...cut in strips and I use my electric fry pan (have a big one) and brown the meat with a little olive oil or stir fry oil and soy sauce or stir fry sauce then throw in a bag of cole slaw mix, mushrooms, broccoli florets, onion, match stick carrots....whatever you like.  Add a little salt and pepper, little more soy sauce, put the cover on and stir every once in a while.  Cook til your veggies get to the consistency you like.  Can serve over brown rice or sometimes I'll add cooked WW spaghetti and make it like lo mein.  Yummy!

I'm too late to help with dinner, obviously!!!

But for another time... one thing that makes my hubby happy is to make skinless boneless chicken in the convection oven, chop it up, and mix it with whole grain pasta into which I wilt fresh spinach. Over this I swirl a little olive oil and Italian seasoning or other all-purpose seasoning, and crumble a little feta cheese. It's yumville.

Takes 20 - 25 mintues.

I can list tons, but I'll just tell you where to go on the net.  Go to www.allrecipes.com .  They have the best recipes there.  Just look for the good reviews and you will for sure make a hit.  You can always subsititute things in ANY recipe to make it healthy.  If you can't figure out the substituions, read the reviews and there is always someone making it healthier.  Just like mashed potatoes..if you are against potatoes..use califlower and cream cheese or sour cream.  I've even used a few laughing cows in mine and it worked.  I've made some fabulous soups from there also.  I actually got rid of all my cook books because I love that site so much.  No need for cook books any more.

The other night I was just throwing things together.  It really wasn't low cal though, but again...you can substitute some things to make it healthier.  I had sausage that I sliced up ( you could use hamburger, pepporoni, anything like that), can of green chili with tomtoes, can of tomatoes, a little jar of spagheti sauce, some tortelini (again..you can use whole wheat noodle), seasonings, and half a cabbage shredded very thin.  It was GOOD.
