B: Toasted whole wheat english muffin; 1 TBSP peanut butter
S: 1 thin slice of swiss cheese
L: 1 cup of homemade black bean/tortilla soup
S: Sliver of cheesecake (about 1/3 inch thick)
D: Salad - 1 cup lettuce; 3 oz. grilled chicken; 1 oz. goat cheese; 1 TBSP italian dressing

My soup is easy to make. The soup morphed from a friend's recipe for tortilla cheese soup - thick and loaded with calories so I changed it up a bit and added some black beans and got rid of most of the cheese.
Saute some onion in some olive oil (in a big soup pot)
Add 1 large carton of chicken broth (I buy the kind in the carton not the can - there's a small carton and a large carton - if I have the small, I use two cartons)
1 can mexican corn
1 can rotel tomatoes (I buy extra hot 'cuz I love spicy food)
1 can creamed corn
1 large or 2 regular size cans of black beans
Boil all that and then I add 1 package of shredded velveeta cheese - it doesn't make the soup creamy but it gives it a good flavor; keep boiling; then I cut up some corn tortillas (how ever many you want) and add that and voila, you end with a HUGE pot of soup that lasts for days and is very good!
