Stacey, I am certainly not an expert but at one time I worked out with a personal trainer who allowed me to eat breads, pasta and rice as long as they were whole wheat and only if I ATE them in the am or for lunch never dinner. He said my body would not burn the calories if i had them late in the day. Makes sense. He swears white bread and pasta have no nutritional value. But honestly does anything that really taste good have nutritional value LoL Once again I'm no expert.
PS I praying for you......the next job you get is going to be everything you've asked for and more.

Some folks are on a low carb program. I'm on "get as close to zero carb" as I can.. LOL I do screw up here and there, but this way really keeps my blood sugar under control without insulin... so whole wheat is still not possible for me.. not now.
I think folks on different programs get some bread and pasta. Heck, I remember bodybuilding days... I stocked up on brown rice and sweet potatoes.

The weightloss in itself did not cure the diabetes. I have added garden tomatoes and onions in my diet in moderation, but I still spike with certain medications, some artificial sweeteners and many vegetables, so things like rice, potatoes and pasta will probably be off of my diet forever.
The carbs I take in (but limit) are mostly dark green things like broccoli, romaine lettuce, zucchini, garden grown green beans (not canned)... I can also do yellow squash (in moderation) and eggplant.
I guess it's not so cut and dry for everyone. The diabetic educator told me that I probably triggered it in my weight lifting days when I went from 165 to 180 lbs. From what I understand, we're born with the propensity to develop a pancreatic disorder by heredity - weight gain flips the switch to turn on what was already predestined to be. I can count 10 in my immediate family who are either Type I, Type II or hypoglycemic... it's now just a matter of control.
Just a side note: My goal is to control my diabetes without insulin. It's a tough tradeoff - but the insulin helped pile the pounds on me, so personally, I'd rather give up the pasta than have to take 20 units of Novolog to offset it's effect on my glucose level. AND I'M DOING GREAT!!! 5.9 A1C babycakes!
