OK.  HERE'S MY RECIPE FOR THE STUFFED MUSHROOMS AND THEY WERE QUITE GOOD BY THE WAY:

1 lb.  fresh mushrooms
4 slices of bacon, cooked and crumbled
1/2 cup minced onion
1 teas. salt
2 TBL. minced green onion
1/8 teas. pepper
2 cloves fresh garlic, minced
a smidgen of worcesteshire sauce
3 oz. cream cheese
1/2 cup ground pork rinds (or you could substitute parmesan cheese here, I just didn't have any, so I used the rinds).
1/4 cup water

-wash and pat mushrooms dry, remove stem creating a "bowl" in the top cap
-saute' onion green pepper, garlic and chopped mushroom stems in a little butter or olive oil
-blend  with cream cheese, bacon,  and worcesteshire sauce, salt and pepper to  make the filling
-saute' the mushroom caps in butter or olive oil for five minutes
-fill the caps with the cream cheese filling
-then press them upside down in the crushed pork rinds or parmesan cheese
-place them in a 9x13 pan  and pour  the 1/4 c. water around them and bake for 20-25 min.

Like I said in my last post, I haven't recieved the book yet so you may want to check the list and make sure that all the ingredients are allowed.  I topped my steaks with the remaining mushrooms that I didn't stuff.  I simply saute'd them in a little butter with sliced onion and it was a very satisfying meal.  The mushroom seemed to satisfy me whereas before I would have eaten a huge baked potato smothered in sour cream and butter.  Good day all.

OMG these sound great. I am an absolute mushroom fanatic and I think all the ingredients look allowable, Jerri correct me if I am wrong. Definetly gona try these this weekend thanks for the recipe.
Ok gals, I have decided to put my scale away until Monday and only weigh once a week. This will be extremely hard for me as I weigh myself every morning and sometime twice during the day. Wish me luck.

Hate to break the bubble but bacon is not a good thing!  Save it for your carb up days if you want some.  It contains some not so nice additives.  Also, it is a fat not a protein so maybe cut down the amount.

Good job on the scale!

Good morning everone. This is another baseline day for me and I had such a great day yesterday. My carb for lunch was 1/2 sweet potato with sprinkled splenda and cinnamon on it. It tasted like a dessert. I am hoping for a nice lose by next week.
How is everyone doing so far?

OK, I need help here!  11 days ago was my 3rd day of week one.  It was so bad I collapsed on the floor of a public rest room.  The story is a couple pages back here.  Any way I did not diet at all for 7 days.  I felt better then and tried it again.  Yesterday was my 3rd day and it was tuff but not as bad as before.  Today 4th day and I have no energy, I can hardly stand for long,  ( I'm watching a lot of TV today) My stomach is crunching and cramping and I haven't been able to eat much..  I am in a cold drippy sweat all day.  Do you think I reach carb depletion in only 2 - 3 days?  Should I stop this all together or should I just start week 2 in the morning?  Still waiting for the book.  I put a tracer on it to see where it is.  I think they are hand writing me a copy;   and ran out of ink!  What is wrong with me??????????

Looking for some incite here : (

Connie, hugs to you my dear. First this is my opinion only. I am not a doctor or the writer of the book so this is just me talking but I have been a low carber on and off for years and know that the dizziness, headaches, stomach cramping (usually fom constipation) can all be part of the low carb thing. I had a scarey thing two nights ago, I went to get out of bed and collapsed from dizzines and weakness, sweating etc.. I had son get me a glass of milk and within a few minutes I was at least able to stand but still very weak and dizzy. I have had this experience every time I go under 40 grams of carbs a day. I am doing much better on week 2 but still had trouble on carb up days because it was not quite enough carbs for me. The baseline days are perfect for me. My situation is not from low sugar because I am diabvetic and checked my sugar right after the incidence and it was fine.
My opinion and advice is to try a baseline day with two meals with a small amount of carb and see how you feel. If this makes a dramatic difference, then carb deplete is just to much for you. There is a difference between feeling carb depleted and just fluish feeling or extreme like yo9u and I felt like collapsing.

Also Connie, remember that no diet is worth hurting yourself. Please do not give up on the entire plan though just because the first week was heck for you. The basic plan has so much balance and is really good for you. I personally cannot wait to even get to week three. I didn't start feeling better until today actually and that was after two baseline days. I am not looking forward to tomorrow a carb up day with only one starch addition. I think though that with the baseline and higher carb days in between that it will still be better. If you just want to talk, email me at [email protected]

Maybe you should talk to your doctor, especially if you think you might fall again.  I worry since you literally hit the floor last time.  I get some of these symptoms if my sugar level is low OR if I am not eating enough food!  Count up your calories for the past few days and make sure you are getting enough calories that your body requires.  If it's too low, eat something...you might not even be hitting your twenty carbs a day that you are allowed also. So check your calories, and carb intake.   If not, think about calling the doc.
