Right now there is a bowl of BROCCOLI steaming in my microwave as a late night snack for me!

I will add a little sweet chilli sauce and a light sprinkle of parmesan cheese.

Who would ever believe it?... it's official! I am a healthy snack nerd.

 

Used to be chips and chocolate!

Now for the really crazy bit... I liked it so much I went back to the veggie draw and cut up more and ate a SECOND bowl of cooked broccoli!  (I am sure the chilli and tiny bit of parmesan cheese sprinlked on it helped...)

.... meanwhile a packet of Lindt chocolates are sitting there uneaten!?! How did this happen? I am a hippie!!!!!  Ahhhhhhhhh

I never thought about putting sweet chili sauce on my broccoli before, only if I use it in stir fries or chicken.  I'll have to give it a shot.  This might sound like a stupid question, but how do you steam your broccoli in the microwave?  I've never used it to steam veggies before!  I can really get into broccoli, so this might be a good snack for myself as well. Parmesan goes well on so many veggies!  I use to eat green beans and parmesan at lunch.  I forgot all about that, I'll have to eat that tomorrow! :)

How's things? I've been worried about how you're coping.

 

You can buy a microwave container with a steaming rack- you just add water.  I like my broccoli cooked for 4 minutes- cooked but aldente.

Beans... with sweet chilli sauce too... yummy.

Cauliflower is yummy too.

Best bit is it's good for you and guilt free snacking.

xiploc mskes steaming bags for the microwave now, too. I haven't tried them yet but I want to.

Thanks.  I'll have to look around for a microwavable steam rack at the store.  I've considered the ziplock bags Beth just mentioned, but it seems like they would get spendy after a while if you use a lot of them.  I am actually starting to eat quite a few veggies now (or I'm realizing I have too. hehe).  I'm finding it hard to find things to eat in the house now if I don't have lots in the kitchen.  Guess it's a good habit, Lord knows I use to hate veggies!  I've just rediscovered cauliflower, use to HATE the stuff!  Tomorrow is going to be an artichoke day for me.  I just adore artichokes, I just hope I can eat them without saturating it in butter! Thanks also for wondering how I'm doing.  I'm doing pretty good.  We got the autopsy report back from my brother in laws helicopter crash.  They are leaning more on it being mechanical failure now instead of weather conditions.  But the list of his injuries is pretty intensive, so now all I vision at night is his face with those injuries in the freezing cold.  Then my sisters face when I opened the front door to the state troopers to tell us he was now deceased.  I will never forget her face.  I've had family pass away, but never so traumatic.  It really makes a difference!  Always sad to lose loved ones though. My leg is also still bothering me.  I got a call from my doctor and they told me the ultrasound came back normal.  Then the hospital just called today and told me the test was for Venous Reflux Disease.  He said it was mild, but I don't need surgery for it.  So now I'm very upset with my doctor who toldl me it was normal and wants me now to do an MRI.  I'm going to call them up tomorrow and ask what the deal is.  Since it's mild, does that mean that I have to deal with this pain?  Or why would he say it is "mild" if it's normal?  Why do I have to do an MRI now?  I'm just really confused.  I'm about ready to go to a different doctor.  I just hate "breaking" a new doctor in...so to speak.  I hate finding ones I like.  So I've been laying around most of the time, legs still pretty tender.  The bruise is healing though so hopefully soon I will be able to get back on my bike!
