Yummy Recipe for Spaghetti Squash

Found this on the South Beach Phase1 recipe board.....DELICIOUS...My SO said to save this one!  I substituted mild salsa for the crushed tomatoes (it was lower in carbs) and it added a little zip to it.  I also used part skim mozzarella too, but could go full fat.  Could actually use this as a main dish...kind of like lasagna.

Spaghetti Squash with Vegetables & Mozzarella

 1 spaghetti squash, cooked & separated into strands 1 lg. yellow onion, diced 1 green bell pepper, chopped 1 red bell pepper, chopped 2 T olive oil 1 can (28 oz.) crushed tomatoes 3-5 cloves garlic, minced 1 tsp. basil 1/2 tsp. Oregano 1 C grated mozzarella cheese 1/2 C grated Parmesan cheese

 Serves 6-8

 Preheat oven to 375 F. Mix the cheese together, set aside. Heat olive oil in a skillet and add the onion, pepper and garlic. Sauté over medium heat for about 5 minutes. Add crushed tomatoes, basil, and crushed red pepper (if using). Simmer uncovered for about 15 minutes. Mix squash well with the cooked vegetables and put half in the bottom of a large (13 x 9 inch) baking dish. Top with half the cheese mixture, followed by the other half of the squash mixture, then the rest of the cheese. Bake for 30 minutes or until cheese is bubbly and slightly browned. Let cool 10-15 minutes before serving.

Nummy!  I love spaghetti squash, almost made it for dinner tonight too!  I have that and a butternut squash that I have to cook up.  I need to look to make sure we can have butternut squash. 

Question- did you put the same amount of salsa in exchange for the tomatoes?  Maybe I'll make this up tomorrow with baked chicken.

Essentially yes!  I had one jar of salsa and I had another jar of a bruschetta topping from our local grocery store here.  I had scoured the aisles looking for the lowest carb/sugar choices.  It would taste great using all salsa though. I don't think butternut squash is on Phase 1.  Got on the scale this morning and had gained a 1/2 lb...too much cheese yesterday and it's not helping the other problem I'm having right now without all my fiber either!!

I'm starting to have the same problem.  I've increased my water hoping that will help.  Going to try to keep moving a little more and see if that helps any also.  My next shopping trip I'm gonna grab some metemucel or benefiber.  Need to do a little research on what foods has more fiber in it.
