Atkins Day 11 - Is it day 11 already?

Breakfast: 4 cups coffee (2 teaspoons creamer, 2 equal packets) 1/4 cup Eggbeaters with yolk 2 sausage patties Lunch: 2 loose cups italian lettuce 3 tbsp ranch dressing 1 pack garlic & herb tuna 1 tbsp real bacon bits Snack: 5 pepperoni slices 1 snack slice mild cheddar Dinner: 6 spears of asparagus (cooked in olive oil, salt, pepper, garlic powder) 30 itsy bitsy bakes shrimp in butter sauce, salt & pepper 2 oz Baked Halibut, seasoned with salt, pepper, light garlic, cajun seasoning, butter 1/8 cup chopped zucchini in tomato sauce. (Shook the sauce off of them, yechy.) Had to be at work early this morning.  Had trouble falling asleep last night from all the beef I ate and had to get up at 5:30am. I was one tired *******  I caved on the splenda and no creamer in my coffee.  Splenda is gross and coffee taste better with creamer so I decided to just use very little of it. Gonna try the heavy cream thing this weekend. Decided to make today an Omega-3 day but didn't get as much fish with dinner as I wanted. I gave the rest of it to the wife because she didn't want the shrimp and disliked the veggies.  So I settled fo rthe shrimp, but the halibut tasted so much better! Worked in the garage when I got home from work. I now have 5.1 surround sound in my garage for listening to FM radio! hahah Energy level is high, turds were solid and floating today! No doubt that's from the beef! heheh Little concerned about the blacker color. I'll watch that and if it doesn't go away I'll consult my doc. TMI, I know..but eh.. i'm a man. The zucchini stuff had sugar in it. I could taste it so I went to look at the can and low and behold it was there, 5 ingredients down. Quite peculiar, I've never been so sensitive to sugar before. I suppose after you don't have it for a while you get that way.  The zucchini was nasty, I ate very little of it.

I'm so jealous, I'm such a halibut lover.  I can't wait until this summer to go fishing and get some.  Then the shrimp...wow, you just ate all out tonight didn't ya!  I'm on my way over to your place!

So you tasted the sugar eh?  Well that's a good sign I guess.  Your bodies letting you know your not eating any of that icky stuff. :)

Ehhh..mine was frozen! hahah We can't get good halibut down here but it was still pretty good! I need to find a fresh market/butcher where I can buy fresh meats and fish. I SO hate all this injected and frozen crap they sell at grocery stores nowadays.

Yep thats it   We just make the meatloaf part.  Hubby makes it like a giant "roll up", I just noticed RR makes them like little "roll ups".  So ours looks like a regular meatloaf.  Iam sure one can take liberties, and use anything they want as far as spices and "stuffing" goes  It tastes REALLY great the next day too!

Yeah I was kinda like ewww at the raisins too, even if I wasn't on Atkins but you never know. It could be a good thing.  I mean after all raisins, grapes and pecans are great in a chicken salad. :) Here's the cut & paste:
Sicilian Stick to Your Ribs Meal: Meatloaf Brasciole (Roll Ups), Pasta, Broccolini and Ricotta

Show:  30 Minute Meals
Episode:  Mid-Week Sunday Dinner
1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix) Salt and pepper 1/2 cup Italian bread crumbs 1 egg 2 cloves garlic, minced 1/4 small white onion, grated 2 tablespoons golden or dark raisins, chopped 3 tablespoons pine nuts, chopped 3 tablespoons grated cheese, Parmigiano or Romano 2 tablespoons chopped flat-leaf parsley 1 cup arugula leaves or baby spinach 6 slices prosciutto di Parma 6 slices deli sliced provolone Extra-virgin olive oil, for drizzling 1/2 pound cavatappi (corkscrew shaped hollow pasta) or rigatoni 1 pound broccolini, trimmed into florets 2 tablespoons butter 1 cup ricotta cheese 2 teaspoons lemon zest 2 tablespoons chopped fresh thyme leaves 12 grape or small vine tomatoes, halved Preheat oven to 450 degrees F.

Pu****er on to boil for your pasta.

Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, , working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.

Roast meatroll 20 minutes. Cut into 1-inch slices, 3 pieces per portion, and serve. Make pasta while meat is in the oven.

Sal****er and cook off pasta, about 7 to 8 minutes to al dente, with a bite to it. Drain and return pasta to hot pot.

While pasta cooks, place broccolini in 1-inch of water in a sauce pot and bring up to a boil. Add salt to the water and add the trimmed broccolini. Cover and cook 5 minutes, drain and reserve.

To hot, cooked pasta add a drizzle of extra-virgin olive oil, butter, ricotta, lemon zest, thyme, broccolini and season with salt and pepper. Toss pasta to coat it in the cheese and butter. Season it with salt, to your taste. Portion pasta onto dinner plates alongside meat roll slices and top pasta with tomatoes and freshly ground pepper.

turds were solid and floating today You make it sounds like a brown cloud warning! LM - mudder friggin  AO!  So funny Now today's food for you...yay!  Great job. That is the way - those trans fats are okay!!!!!  Fast food burgers are allegedly dredged in trans fat from the wrong side of the chain! Canned zuccini sucks, yech.  I was going to tell you - DH bought that low carb catsup for me months ago - that's how slow I use it, and it is discontinued.  You can make your own with splenda.  I used to - it is waaaay better, it really is.

Yeah I figured I'd better go easy yesterday. :)  It took me a long time to get hungry in the morning. I brought my sausage and egg with me to work and didn't end up eating till 9am. Lol beef was there for a while! Yeah I think the FF burgers have been altered/hydrogenated err something to make them keep longer.  S'okay.. I won't be having any FF burgers for a while. I've had my fill! hehe good to know i can if I wanna though. That zucchini was wretched!! I had it once before and thought I liked it.. Boy have my tastes changed. I've gotten so used to eating fresh zucchini (well as fresh as you can get from wal-mart) that anything else tastes yechy now. My garden ain't doing so good. Let's hope the seeds I planted sprout because the ones we grew inside are fossilizing now.  Damn weather! It dropped down to the 30s the other night here. I swear next year I'm gonna plant in April!

Re: sugar sensitivity, first time I had a bite of something (Vday) off Atkins, I swear my body went into shock.  It was like I had a hit of a drug.  Reminded me...I don't need sugar anymore.
