I used to have a cottage cheese/egg white/oatmeal pancake recipe - wonder if we can find it on the web!  Awesome. well, here it is! These are good cold and slightly re-heated, too.

Ingredients

  • 1/2 cup oatmeal
  • 1/2 cup cottage cheese
  • 1 teaspoon vanilla
  • 4  egg whites

    Directions

    1. 1
      Blend all ingredients in blender.
    2. 2
      Spray skillet with cooking spray and cook just like"silver dollar" pancakes, a few small ones at a time.

      Top with your favorite pancake topping!

    Thanks, Neecee!  Sounds yummy. Unfortunately, not allowed oatmeal in phase 1, but will certainly keep this recipe for future use!  I love my pancakes and always make blueberry pancakes for the grandkids when they spend the weekend....now I can toss a few blueberries on top (when I can have those again...LOL) and enjoy with them!!

    Nearly every thime I have changed how I eat, the worst time is the first week! You will do this thing.  Get focused.  If you continue to struggle with hunger this much after the first week, then think about doing something else...namely, less grains than you currently imbibe.  Take some extra chromium picconlate (sic)...my bariatric doc says it helps with blood sugar control.

    Can't possibly do less grains...I'm having none right now!  LOL

    Actually that was the only time this first week that I have been hungry like that.  No cravings at al on this...I'm lovin it!  Even filled the Easter baskets this morning and the Cadbury eggs and jelly beans didn't even bother me...Amazing!

    I think this is gonna work....very liveable and only on Phase 1.  If I can eventually get my oatmeal and blueberries back, I'll be good to go.
