Cauliflower Lovers
CAULIFLOWER HASH BROWNS 12 ounces fresh cauliflower, grated, about 1/2 medium head 4 slices bacon, chopped 3 ounces onion, chopped, about 1/2 cup 1-2 tablespoons butter, optional Salt and pepper, to taste
In a medium-large nonstick skillet, cook the bacon and onion until they just start to brown. Add the cauliflower; cook and stir until the cauliflower is tender and nicely browned all over. You can add a couple tablespoons of butter during cooking. This will speed up the browning and add nice flavor. Season to taste with salt and pepper.
Makes 4 servings Do not freeze

Oh wow, thanks! That looks really good. I usually hate cauliflower and tried it mocked mash potatoes for the first time the other night. I was so impressed by it. Wi**** wasn't so expensive though, I paid five bucks just for one head. Which in this house is just for one dinner. I'm wondering if frozen would work as good in some of these recipes or if it would be too soggy. Have you tried that at all?
Yea, when I lived down in Washington for a while I noticed the price of can goods was only about ten cents difference. Cereals were a tad bit more. All the dairy, meats, fruits, and vegetables are really high compared to down there..oh and pop..lol I always get excited going down there, just to look at the prices of things. I'm one that pays the price regardless most of the time just to get good food, but we have to put a limit to it some where ya know I mean? For a family of six it gets spendy!
