Atkins friendly peanut butter cookies...in case you missed it
1c natural peanut butter
1c splenda or sweetner of choice (adjust as needed based on the sweetner used)
1tsp vanilla r flavoring of choice
1egg or equivalent egg substitute
Drop by rounded teaspoons onto ungreased cookie sheet. Bake at 350 until bottoms are golden brown.
Provides a rich peanut butter taste because there is no flour.
Holly adjusted these amounts to make just two cookies and added cocoa powder instead of vanilla so I say this is a good recipe to play around and have fun with.
Christa put the basic recipe in on daily plate and got very low counts on everything so it seems to be a fairly healthy cookie to feed your sweet tooth as well.
