Lol I just tried your cookies with two tablespoons of my allowed peanut butter.  I didn't have vanilla, not sure if I can have it anyway, so I used cocoa powder as a replacement.  Since it was such a little amount I used one packet of splenda and about a teaspoon or so of egg substitute.  It worked!  Lol I just ate two cookies! ha  I knew I needed a veggie with my snack so I munched on a piece of celery also. Cool, it makes two cookies, just enough and no left overs for a binge! hehe Thanks!

Wow, Holly, like that idea with no leftovers....I can't be trusted with those yet (maybe never...LOL).  Vanilla extract is on our acceptable list of flavorings, but I noticed on mine (pure extract) that it lists corn syrup as the third ingredient...I've been using almond instead for that reason. I'll have to try these when I get some PB!!  Thanks Beth....definitely copied that recipe!

I made them tonight, too.  DH really enjoyed them.  I ate one, but had to drink a lot afterwards.  I find them very dry.  But I used Extra Crunchy.  Maybe that made a difference. But I'm not complaining.  It fixed my sweet tooth and saved me from eating something VERY naughty.   Thanks again, Beth!!! Bren
