Fast and easy Atkins desert recipe?

Do you like peanut butter cookies? These have a VERY rich peanut butter taste. 1c peanut butter 1c splenda 1tsp vanilla 1egg or equivalent egg beaters That's right...NO flour. Place by rounded tsp on cookie sheet, press down lightly. Bake at 350 until bottoms are golden brown.  ENJOY!

Thanks, Beth!  Ever since Bud said he made Peanut Butter cookies, I've been craving them. I have all the ingredients, so I'm gonna make some tomorrow. Thanks again! Bren P.S.  You don't happen to know the calorie, carbs, protein, or fat count?

Sorry but I sure don't. I was just thinking of a pb cookie recipe I used for my kids cuz they could make them so easy and adapted the ingredients when it came to the sugar and the egg. I'm sure you could enter the ingredients into Fitday or Daily Plate and get the total counts and then divide that by the number of cookies you make. It should prove fairly accurate. I hope they are as good as you anticipate. Beth

LOL I wonder if I could use it with the two tablespoons of natural peanut butter I'm allowed.  lol recipe for one cookie! hehe

I was thinking natural peanut butter will be fine. I would think you would almost have to use natural PB in order to be Atkins friendly. I never tried making one cookie but let me know how it goes. lol

WOW. Yum. I am gonna enter it into Daily Plate and see what the counts are for everything...even tho I dont think I will ever make them....i will eat them all in one sitting...so. I cant do it. :( lol. Even tho they SOUND WONDERFUL!

Depends on size. I usually get about 2.5 dozen small (Approx 2") cookies. I can eat more that way...hee hee hee. Of course you can make them bigger if you like.

WOW! Out of one cup of PB....I was putting it all in and I just guess and said 10 servings I figure one serving one cookie. Everything is REALLY low.

My cookies are very small. 12-1 tsp each. This way I feel like I am getting more than I am.
