Atkins Day 9 - I ate mashed taterz!
Breakfast:
1 leaf iceburg lettuce
2 sausage patties
1/4 eggbeaters
1 tbs real bacon bits
Lunch:
2 cups italian lettuce
1 pack herb & garlic tuna
2 tbs real bacon bits
3 tbs spicy ranch dressing
1 broccoli & cheese side (can't remember the ounces, small)
Dinner:
6-8 oz Herb Rubbed Fillet of Beef
1/4 cup seasoned mustard greens
1 cup Faux Mashed Potatoes (cauliflower, sour cream, seasoning)
Snack:
Sugar Free Lime Jello (Still haven't eaten all of that stuff!)
Man that jello sure doe**** bottom and stay there there.. Or perhaps that was the beef? Dunno! Still doing good! Them mashed taterz sure were good!! It's amazing how it really seemed like I was eating mashed potatoes! I guess it's just the consistency. The texture was kind've like when you make mashed potatoes and don't get them mashed up enough..it's good that way! :P
Energy level was great today. I was "happy" and felt like contributing to society. I felt alert and on top of my game. My mind was sharp. This could also be because of the thyroid meds. The doc increased my dosage and one of the side affects of hypothyroidism is fog of the brain. The fog was lifted today. Me..I think it's a combo of the synthroid and Atkins.
Side note.. I should eat beef with cauliflower more often..Man that's a great combo!

Lime jello is my favorite Jello of ALL time! I love lime flavored things. You speaking of Cauliflower brings back childhood memories. I had this best friend when I was uh 12 and her mom always made this cauliflower with cheese thing...it wasnt a bake...it was like a wet kinda creamy like cheese OMG it is so good...I have no idea how she made it...I wish I did. I havent talked to that girl in AGES!

Ahhh! I gained... damnit lol It was only like a pound but still I was getting used to seeing it drop each day. Not sure if I should continue as I am or eat less. Had a lot of sodium again yesterday... OKay.. I'll cut out the equal and cut down the sodium and see how that works. Maybe I should cut out the coffee all together.. I didn't drink any over the weekend and seemed to do fine. Curious to see how all this affects the scale.

Ride the wave and don't be so quick to abort. Weight will not be consistently one direction, it will vary. Heck, I'm actually up 3 lbs, but am sure it's muscle. I'm not gonna let it freak me out (anymore). I just added heavy weights back in last 2.5 weeks, so it is what it is. And prior to that, it still varied some. 1lb is nothing to worry over. Lower the sodium, avoid nuts, limit cheeses some, and stop worrying ; )
Something for your sweet-tooth:
1 avocado
1/3c coconut milk
1 egg
1**** or water
splenda to taste
Blend.
~5-6g carbs
like a milkshake
necessary healthy fats
high calorie for your too low calorie days (520c) or as a meal replacement
If you stall out it could be not enough fats or calories, so this is something to keep in mind.
Do not fear fat or calories : ) You may find when you eat the right calories and fats, you lose. I know I hold steady if I stick to 1600calories and lose if I can manage at least 1000 more than that.
I tried those last night too. I was too lazy to find my recipe so I just blended it up in the processor with a smidge of sour cream and one laughing cow, and it was great! This is going to save me I think. Forget it being good with only steak, I'm thinking cauliflower every other night!ha I'm a potato girl, so I'm gonna love this. Think next time I'm going to just try to use one laughing cow and see what happens. I have a feeling it will still work. I really liked the cheesy taste to it.
Mashed cauli RAWKS! we still make it. I had another wonderful cauli recipe somewhere's - a white cheese sauce over boiled cauli, then baked. When it come out, shred proscuitto over it and dig in. Stop weighing yourself, you Osbesso! If one loses that fast and that consistently, there are bound to be small plateaus.
