Breakfast 6 small whole wheat pancakes with margarine & light syrup 2 scrambled eggs 3/4 cup grapefruit juice 1 cup 1% milk 2 cups hazelnut coffee 20 oz. water Lunch 6 tiny whole wheat pita pockets Meatloaf (small) with gravy Mashed potatoes (small) with gravy Peas Mandarin orange slices 1 large Slimfast Bar 16 oz. water Afternoon snack 1 South Beach Diet power bar Dinner Rotisserie chicken leg & wing with skin 1 cup mashed potatoes with margarine 1/2 can light fruit ****tail 1 can New England clam chowder 1-1/2 cups 1% milk Evening Snack 2 chocolate graham crackers Denise Phares/kitties4

Hey denise I've always wondered how the whole wheat pancakes taste. What's your opinion?

I have the best recipe for wheat pancakes, its really good!  I make a big batch & keep in the frig for a few days; so you can cut it in half if you have a smaller family.  The recipe makes 36 4" pancakes.

6 eggs 3 cups all purpose flour 3 cups wheat flour 6 cups buttermilk 6T brown sugar 12T (1Cup) vegetable oil 6t baking powder 1&1/2t salt 3t baking soda If the batter is too thick, stir in a couple tablespoons of milk  uuntil it is the correct consistancy (imho, good pancake batter should be fairly thin & not thick). Occasionally I've mixed pecans in the batter as well.  I only make this about once every month or two...love 'em, but can't eat just one & topped with butter & syrup, makes for a rare treat. Lisa

Its a recipe that I tweaked & made adjustments, so the nutritional value isn't written anywhere.  I just went to calorieking.com & calculated it up.  This is for a single 4 inch pancake & doesn't include butter or syrup.  So the most I'd have at one time is 2 or maybe 3 if its Friday:-)  Instead of syrup or butter, you could probably use fresh fruit & low fat cool whip (has few calories anyway). Calories: 170 Fat: 8 grams Sat Fat: 1 gram Cholestorol: 38 mg Sodium: 355 mg (could probably reduce the salt in recipe or even eliminate; I'll try next time) Carbs: 18 grams Fiber: 2 grams Protein: 5 grams Again, I treat this more as a dessert than an actual healthy meal-lol!  Thats why I only make it once every month or two.   Lisa
