Question about fat content in red meat
I suggest the book Fast Food Nation. it is on the sensational side, but does bring up some good points.
In America, especially for government programs, commodity beef/pork/chicken is used. Therefore, the cheapest bid is granted. This can mean that the meat is mass-produced, therefore commercially raised & butchered in ways that are not deemed top quality.
One example is that cows are butchered so fast and mechanically that their entrails are, simply put, massacred, leaving e-coli (poop) in the meat.
Very cheap grades of meat are said to have chemicals and physical contaminants in the meat, again, allegedly.
It makes sense on another level for me. What meat would be "better": meat from a cow who munched grass in sunny hillsides and got whacked from behind to be killed for slaughter ORRRRRR some poor wedged animal stuffed with food, under trauma, mass murdered like a person in Auschwitz?
Food for thought. makes a hunter taking down a deer seem the highest honor, right?
PS I LOVE beef and pork and try to purchase it only from one or two sources in my town (a meat market and Harris Ranches)...but this fast food nation discussion is one reason again, NOT to go to most fast food joints...where do you think they get that meat? hmmmmmmm?

I myself do not eat that much Beef. Unless I go out to eat or get it from Fast Food which I dont ever go to fast food barely anymore.
The red meat that I consume is always Venison which I think tastes ALOT better than any Cow i have ever came across lol. Plus its very lean :)
Seriously I have lived off of venison this month! I usually can be stocked on it for a year because one of my brothers and my dad hunts :)

venison, especially ground (IMHO), is awesome. The steaks can come out gamey, esp if not butechered correctly or in certain regions. I have yet to come across gamey ground venison, for some reason. I was told once that the gamey parts are cuts located around a gland they have and if that gland is currupted in the butcher process, it will increase that flavor. I don't know first hand, and I certainly could not, more like would not, butcher one.
One fairly sure bet is to soak steaks first in buttermilk, then cook in a spicy tomato-based sauce - this hides any possible gamey taste.
Elk is also very good. I have had buffalo, not bad!
