Yesss!  My kind of grub, right there. I "do" my eggplant under the broiler, no frying, so it turns out fairly healthy - well, 'cept for all the damn mozz cheese i put on the sauce later.  I also made sure to get my Xmas day walk in - about an hour, leisurely pace with DH, 3 1/2  miles maybe? Xmas eve - did a 3 hours bike ride, dude, almost killed me. I have not been on my bike to speak of in a month or so...was cold out, I actually wa****ting the wall, had to get off and eat a protein bar half two times to make it home.  Xmas Eve eve, I cleaned this house like it was 1999. I'm talkin' from 8:00 a.m. til 1:30 p.m., non-stop.

Yes I was to be sure not to deprive myself and eat whatever I wanted (reasonable), granted I exercised for the day. I didn't have a breakfast either cause I knew I would be eating the Christmas food throughout the day, and I wasn't hungry when I woke up oddly... Neecee & LVS: The eggplant was good as hell! I had like 3 plates of it, and I still have a half pan left! I will eat it throughout the week as exercise permits! I don't fry or bread it. I cube it small, throw it into a pan with a lil butter and water till tender. Reduce my marinara seperately until THICK! Toss with the eggplant, add some seasonings, and throw the mozzarella on top and bake until brown! DAMN GOOEY GOODNESS!

Ah.. ya see...  I slice and steam it with butter, salt and romano NOW, but if I'm gonna have eggplant... it's gonna be evil! I slice it.. flour, egg and bread it.. then fry in extra light olive oil & butter.. set on paper towels to drain until there's a mountain of it.  Then I layer it as follows:  sauce on the bottom, layer of eggplant, dab of sauce on that, ricotta, mozarella, romano, basil and oregano, sauce.. then do it again until there's three layers.. like a lasagne.  IT'S SO EVIL!  ... but it's so good.   I visited a friend from high school (we went to school in NJ) recently and filled his freezer with eggplant and stuffed peppers, meatballs and sausage and sauce.  He thought he died and woke up in NJ on a cold Sunday morning when the house is filled with the dreamy scent of sauce mom would be stirring on the stove for hours and hours..   I just..... um...  sniffed the stuff.  LOL  Thank goodness I didn't have more time or I KNOW I would have mowwed on the stuffed shells and manicotti I would have made!!  I avoided the lasagne and those butchers in Iowa have NO CLUE what braccioli is, so that whole temptation was avoided. mmm...I want eggplant for breakfast!  LOL Lori

That does sound evil! Do you call that Eggplant Parmigiana? I've seen it called that when breaded. What is braccioli? I have a feeling it is not a green or white vegetable with heads and is good with butter! LOL  Also what is gnochi? You named alot of stuff that I have no idea what it is... It sounds overwhelming.. Almost like you can't get it all on your plate.... you have to do multiple rounds to get it all in! My kinda eating! LOL

You know I checked out a video on youtube where this lady cooked Eggplant Frittata... its looked like a real nice breakfast item because it was light!

I watch ALOT of the food channel lol so I believe gnochi is like a ravioli filled with potatoe? Kind of like perogi? I think that is what it is.  Gnochi (No-ki)

I was close about the Gnocchi, its not filled with Potato. It is a dumpling made from potato. CLOSE!!! lol I have never had them tho.

Yep.. eggplant parm...   Braccioli is like... flat pork or beef (I prefer pork), stuffed with fresh parsley, onions, garlic, breadcrumbs....  whatever floats your boat really...    rolled and tied, then dropped in the sauce to cook.  In Jersey, you can just get it already prepped from the butcher so ya just drop it in the sauce with the sausage and meatballs. Think of gnochi as a little potato dumpling. Normally, we had at least 40 people for dinner... so the food wasn't that overwhelming.  The antipasto was traditionally my job.. done in layers on a 2.5' serving tray.. lettuce, tomato, ham, genoa, provolone, sliced hard boiled eggs, black olives, pepperoncini and topped with gardiniera. In my thin days, my husband and I would eat out three times a week, and always ordered the same thing at a little place called Barcelonas in Garfield, NJ..  Antipasto deluxe, no green olive, no anchovie, order of mussels and a half a loaf of garlic bread and split it.. it was so great. Oh.. and what meal would be complete without a capuccino and a DELICIOUSLY EVIL canoli! Sniff.. sniff.. now I wanna go HOME!  LOL   Alrighty then.. too much nostalgia for me!!  LOL

I think I did pretty good.. breakfast was a scrambled egg, 2 biscuits and some gravy... and a coupla mimosas....  LOL then I had a cinnamon roll.... dinner was 2 pieces of ham, 2 big servings of green beans and 2 servings of cheesey potatoes 1 piece of pumkin pie - with whipped cream granted, not the best choices, but reasonable amounts of each and I did manage to keep from munching on candy all day long!

Hey v-mom! My day was actually pretty similar: breakfast: 2 eggs over easy 2 veg sausage patties 1 caramel roll  1 c nf milk 6 gallons of coffee  3 hours later:  1 ounce turkey 1 slice alpine lace cheese 1 ww english muffin 1 serving fritos 1/2 c salsa 3 beers 2 shots tequila Supper: 4 ounces prime rib 1 c cheesy church potatoes big pile of romaine salad with just 2 good dressing, various veggies like cukes, tomatoes, etc.  I small slice lemon cake
