Haha I guess that is a good mind set tho as well....if food = evil then I guess you wont eat it! I never think that way lol. That's why I am finally getting some help with it. Gosh I wish I would have tried all of this at age 18.....ah less to lose lol.

easy turkey chilli Brown: 1 package (20 ounces) ground chilli 1 cup chopped onions Add: 2 15 oz cans kidney beans (drained and rinsed) 2 - 30 oz cans diced tomatoes 2 - package chili seasonings Heat through and enjoy!  This makes about 10 cups of chili for about 120 calories per cup!  if you are watching sodium just read lables on the tomatoes, seasonings and beans.

Stacy, I'm a chicken lover and even though my DB isn't as crazy about it as I am, he LOVES this recipe.  It has a nice kick to it, though not too spicy.  I found it on the Suzanne Somers website. 2 boneless, skinless chicken breasts 1/2 cup grated Parmesan cheese 1/2 tablespoons chile powder 1/2 tablespoon ground cumin 1/2 teaspoon garlic powder 1/2 teaspoon pepper 1/2 cup butter 1. Preheat the oven to 350°F. 2. Wash and pat dry chicken breasts. Cut into 1/2-inch strips. 3. Combine the Parmesan cheese and rest of the spices in a shallow bowl. 4. Line a shallow baking pan with foil. (Do not omit this step or you'll be scrubbing the pan for a week.) 5. Melt the butter in a shallow bowl. Dip each chicken tender in butter, roll in the cheese and seasoning mixture, and arrange in the foil-lined pan. 6. Bake for about 20-30 minutes

don't limit to only chicken and tuna! Lean cuts of beef are fine, also pork can be even lower fat than any of the above - read labels!!!! I am a major tomato sauce lover, so that is always a way to punk it up.  Simmer some lean beef or chicken in tomato sauce + 1 teaspoon curry powder + lite sauteed bell pepper, onion, garlic, salt pepper.  Add 1/4 raisins right before serving, put over some brown rice.   Also love beef or turkey in mexi-flavored tomato sauce!!!! Sautee up some bell pepper, onions cut into strips, barely cover in mexi-tomato sauce, put in whole wheat tortilla wraps. Lean ground pork or turkey - spice up with oriental spices, even just soy sauce and hot pepppers, make a wrap out of that!  Check out ww recipes - there must be 1 million of them!

Re: tomato sauce--choose carefully or prepare your own.  Most commercial brands are loaded with sugar.

Hi StacyAnn!

I find life with chicken, lean beef and fish more than acceptable so long as I alternate the meat and vegetables and change the presentation, I bore too easily!

Here's some of my menu 'regulars':

marinate the meat then serve with vegetables/ salad

put a 'rub' on: eg herbs, spices, lemon pepper

make a low joule sauce- eg mushrooms panfried with onion and a splash of white wine, tomato based sauces- with chilli if you like spice

kebabs- alternate with vegetable pieces (you could even marinate the kebab)

stir fry with a heap of veggies, garlic, ginger and soy sauce

baked with a sprinkle of herbs or paprika then serve with vegetables/ salad

mince to make rissole patties (pan fry in a tiny amount of oil or non-stick pan) then serve with vegetables/ salad

slice up broiled chicken/beef/firm fleshed fish and serve with lots of varied salad greens and a low joule dressing- maybe a thai dressing?

slice up meat and add lettuce, tomato salsa, onion, and small amounts of grated cheese in a pita bread wrap/ tortilla (if you're watching carbs have less carbs at lunch instead)

roast meat and serve with roasted veggies (forget the oil)

casserole meats with lots of veggies ans herbs

soups/ stews

curries- make your curry base from bottled spiced & natural low fat yoghurt with veggies

vary the vegatables- salad, standard veggies, BBQ, stri fry, stuffed tomato/peppers

cauliflower is my dream 'rice': boil until tender and food process until texture of rice- especially great if served with casseroles, curries etc
