Paging Neecee...what do YOU do with beets?
So I went to the farmers market today for the first time in a long time. Maybe ever? I remember buying a muffin there once, but that's about it.
So I purchased some lovely beets and chopped some raw in my salad today. Yum. But how else can I use them? I 'peeled' mine with a knife but I am up for leaving the skin on too if you can tell me how to clean 'em. The only thing I won't do is bite into a huge chunk of plain steamed beet...I don't like the taste of that for some reason. Maybe I just need to use smaller pieces?

My best trick to clean them is...underwater in a bowl. Fill a big bowl with water, peel under water and slice them under the water. Place in a colander to dry til you are ready to work with them.
Make sure they are completley dry - even use a paper towel if needed, then chunk them and put the barest amount of olive oil on them. Roast in the oven for like an hour - or til browned. Place the hot roasted beet in some high grade balsamic vinegar and enjoy!!!! The leftovers can be stored in the balsamic and enjoyed all week.
I have also thin sliced them, partial boil. Again, lightly cover with olive oil, grill till browned.
I love them boiled, then mashed with the tinest bit of butter, too!
I have had them diced and pan fried, believe it or not, with onion, just like fried potatoes, then mix in leftover roast beef and heat thru. i believe this is called red flannel hash.
Raw, grated beet is pretty excellent!!!!
