Oh, sorry! I misinterpreted that a bit, I see. At least we got to know eachother better...meaning, I vented about what a TERROR! I used to be, and now you know! You're right that it's hard to turn veggies into convenience food, especially if you don't like them raw. Sigh. How about keeping some canned pure pumpkin, sweet potato, and butternut squash on hand? You can mix those into pudding, for example, and combine them with peanut butter on a sandwich.

Let me start by admitting that myself and my 3 kids all love veggies (except brussel sprouts! YUCK!).  It is my darling husband who practically gags at many veggies. Variety is the spice of life- alternate between cooked and salad to start with. Find something they like that has veggies and isn't too time consuming and repeat that meal weekly.  My family has burgers every Saturday- it is a 'tradition'.

My veggie 'tricks' I use for my husband:

'Great' ideas: GRATE:  spaghetti bol mixture with 1 cup of grated carrot and 1 cup of grated zucchini added then simmered until you can't recognise the veggies- make a triple batch and freeze two portions for those late nights.  If you are in a super hurry put the grated carrot/zuchini in a microwave proof dish and zap it until it's soft while you brown the meat. I also add mushrooms and finely chopped peppers.  Add a bit of chilli and/or kidney beans/corn kernal for a tex mex version.  

FRIED RICE: it's amazing how nice veggies taste in a fried rice mix.

NOODLES: stir a heap of lean thinly sliced meat (beef, chicken, prawns or even a bit of each) then LIGHTLY fry a heap of veg, add some singapore noodles, a tablespoon of grated garlic and ginger, a splash of soya sauce to taste and dinner's ready in less that 15 minutes.

SALAD CAN BE YOUR FRIEND: lean cooked chicken or beef, a tortilla with a smear of avocado, a little grated cheese- add tomato slices, cucumber slices and lettuce. Add a spoon of salsa.

HAMBURGERS/STEAK SANDWICH: lean patty/steak and salad. I add weird thing to my burgers like salsa- yum.  Very quick, virtually no cooking other than the meat. The patty itself can hide a little grated carrot or zucchini if you make them at home and freeze them ready for a quick meal.

On LUNCH- GRATED CARROT and CHEESE and a slice of pineapple (NOT for school lunch as it will go soggy)

If your family like broccoli, carrots, bean and corn that's a great start.

I am like you and am not a big fan of veggies.  I like them, but get bored easily and need to find new ways to fix them.  I found one salad that I can't seem to get sick of.  Some times I think I over eat this salad it's so good.  Thought I would share it with you.  It has veggies and extra fiber. Romaine lettuce lime juice cilantro tomatoes..etc, whatever you want chicken if you want extra protien black beans for the dressing I mix ranch with a tiny bit of bbq sauce.  I know it sounds gross, but it's actually quite good.  It's basically a south western salad.
