low calorie butter substitute?
Pls don't say margarine... that stuff is the devil!
I'm looking for something I can use to cook with that isn't full of calories. I used to cook with butter or olive oil but both those things are high in calories. Is there something out there that is good for preventing sticking & searing yet isn't going to cost me 15% of my daily caloric intake?

To cook on the range top, there's butter flavored cooking sprays (like PAM.) To put on fresh veggies or potatoes and the like, I use Olivio Spray-- very lowfat and low calorie, and made from buttermilk solids so it's buttery tasting.
For baking? I'm thinking margarine's your best bet, but find one that's made from butter solids, or the "I Can't Believe It's Not Butter" line.

Shari has it right, pan spray is the best bet for saute.
One caveat for foodies who care for their equipment: pan sprays will wreck most non-stick pan surfaces...best to use a paper towel and lightly swab with olive oil. DH and I use stainless pans now, and use the pan sprays for most things.
As for baking, use butter and teach yourself to eat less of the end product. What i am told in my Betty Crocker cookbook, the fake spreads must be at least 60% butter solids for baking purposes. You are going to end up with a less quality product with those, too. EDIT: read your labels...margarine and butter pretty much have the same caloric value. One tastes like **** the other doesn't. Gee, which will you pick????
My philosophy with eating low fat has been proven: most people end up eating more. Partly psychological, partly chemical...our bodies know we are trying to trick it, and we seek the same level of calories. May as well have the product in its intended form and enjoy less of it.
I mean, there are low fat products i use, but they tend to be cottage cheese, cheese slices, milk, yogurts, mayo. I gave up on the fake margarine spreads...butter is my choice when I choose to use it. i'll make concessions in other areas, but not there. Long ago, I quit using anything at all on veggies, but on bread, fageddaboudit, it is butter and peanut butter or i would not eat bread.
let's face it, baked products and bread & butter are not conducive to lowering calories, so these items tend to be things we need to be eating way less of. I'd rather enjoy the real thing less often.
Same goes for sugar and fake sugar things!!!! Again, a few exceptions. I loves me my diet pepsi.
I totally agree with this. When I eat the low fat/fat free products I usually feel cheated anyway. I rather enjoy a little bit of great than a fair to generous amount of eh. There are things where I feel the trade off is worth like fat free milk and some of the lower calorie and/or fat/sugar dressings are pretty good, but I gots to have me some real cheese (Boar's Head brand sliced thin).
I am of the eat the real deal camp.
That said I also use the pam sprays... the butter one is great for eggs! Olive oil spray for veggies...
but when I have my fried egg every night with an english muffin there is REAL butter on that muffin.
I use Brummel and brown spread on hot veggies and potatoes... but dont like it on toast or english muffins...

Okay so I just picked up the 2 PAM sprays you recommended, the butter one and the olive oil! We'll try it out today and tomorrow and see how it goes! :)
I also got molly mcbutter(sp?) for shaking over stuff, and a "You can't believe it's not butter!" tub for toast.
