Ohhh that looks good! Ok - I'll Play... Curried Cauliflower Spray some Pam in a skillet Add 1/4 t of coriander seeds 1/4 t dry rice. let it sizzle until the rice turns brown.
Add 2 cups of fresh or thawed cauliflower 1T chopped fresh ginger 1T chopped hot green chili (I remove the seeds - you dont have to) Cook over medium heat until the cauliflower is a nice brown color. Stir frequently While the cauliflower is frying mix in a small bowl 2****er 1/4 t garam masala 1/4 t tumeric fresh ground black pepper pour this over the browned cauliflower and cover for 4 or 5 minutes until the cauliflower is cooked.
This is so yummy ...... I love it. this is a 'serves one' recipie is there anyone who can figure the calories etc???

Pam 1 second spray = 7 cals, .7g fat Coriander Seeds 1 teaspoon = 5 calories, .3g fat Rice (dry, precooked, instant) .5 ounces = 54 cals, .1g fat Cauliflower, fresh 2 cups = 50 cals, .2g fat Ginger .5 ounces = 11 cals, .1g fat Hot Green Chili 1.6oz (1 pepper) 18 cals, .1g fat Garam Masala (1/4 serving) = 33 cals, 3g fat Tumeric .25 teaspoon = 2 cals, .1g fat Ground Black Pepper = 0 cals, 0 fat (niiiiicccee! :D )
Total: 180 calories, 4.6g fat. Not too shabby! In fact, some of the portion sizes may have been less but it's hard to get so small. (The rice and garam masala for example.)
looking closely at the numbers.... I think that the rice calories are high... 54 cals for 1/4 teaspoon of dry rice seems too much and I think that the Garam Masala is high too... it is a dry spice mix so 33 cals for 1/4 t is high too.
Honestly when I do this on my daily plate I only count the pam, the cauliflower and the chili. I figure seasonings are free if they dont have salt..LOL ETA - If I had read your post closely the first time Chris I would know that you already knew this! LOL
