Yummy Stuff I Still Eat

I've been getting a lot of questions lately about what I eat, so I thought I would post a couple of "recipes". Understand-- until March, the best I ever did was to slather ketchup on my McFries, but I now prepare stuff- just not generally from "scratch" because I am lazy as hell.

Some favorites:

1) BOSTON MARKETISH-- I buy the already made mashed potatoes from the grocer's fridge and meat with gravy containers (Bob Evans brand, etc.) and split them into serving size complete meals. Tonight, I am having sliced turkey, sour cream and chives mashed potatoes, and a whole can of green beans, which breaks down like this: Turkey w/Gravy-        140  Cals>  5 fat/  7 carbs/  15 protein Mashed Potatoes-   140 Cals>   6 fat/ 20 carbs/ 3 protein Green Beans-             40 Cals>   0 fat/ 8 carbs/1 protein    + Olivio Butter Spray-- Contains nothing and tastes great!                   ___________________________                                      320 Cals>   11 fat/ 35 carbs/ 19 protein This is possible today because I ate a LOT of protein early in the day. 2) PIZZA THE HUTT (related to Jabba)-- I love pizza. I make everything on earth into pizza lately, because it's a tasty and easy way to get in all the food groups. First, find a low carb thin "bread"-- like the kind you make wraps with. BJs sells my favorite-- a HUGE wrap called "Damascus" that bakes up crispy and thin but is sturdy.  Combo 1- Pepperoni and Mushroom Pizza- Damascus Wrap, a tablespoon of Ragu Pizza Quick, a TON of mushrooms (19 cals a CUP!) and 50% reduced fat pepperoni-- best with shredded 2% mozzerella, but still edible with one serving of fat free cheese. Sprinkle a little oregano one top-- cook at 350 for 5-10 minutes (note: fat free cheese doesn't exactly "melt".) Combo 2- Taco Pizza-- Fry up a bunch of lean ground turkey with taco seasoning (you can save a bunch in Tupperware for days). Spread about 1/3 cup on your wrap crust, then add a serving of low fat or nonfat cheddar cheese. Serve with no-fat sour cream and salsa-- (salsa is naturally low-cal.) Combo 3- Honey Mustard Chicken Pizza-- use a little fat free Honey Dijon dressing thinly spread, then add 3/4 cup of Perdue Done It chicken bits, a cup of mushrooms, and top with serving of low or nonfat cheddar cheese. These tend to come out in the 300 calorie range, so you can often add a small salad or cup of soup. _____________________________________________________ 3) Mickey Deez-- Like Big Macs? Try a turkey burger, a slice of low or no-fat cheese, some fat free thousand island dressing-- on a wrap, with shredded lettuce. Delicious! _______________________________________________________________ 4) A couple fresh strawberries and a fat free fudgesicle at the same time is like a chocolate covered berry. Yum! ______________________________________________________ 5) Buy fresh berries, pineapple and a little kiwi-- slice 'em up and they will keep up to  week, then when the mood strikes, a half cup with a 6 oz Dannon Light/Fit yogurt is a yummy dessert or breakfast-- try the raspberry/white chocolate flavor! Okay, not sure if any of that's of interest, but these and Lean Cuisine, plus fresh roasted turkey and salads are my dietary mainstays these days. I get in between 1200-1300 calories a day and don't feel lousy at all! -S.

Hey Shari,

Your idea for using a wrap for pizza dough is great.  I never thought of that, but I love wraps and always have some in my fridge--the whole wrap itself is only 90 calories.  You're right, add some tomato sauce and veggies, maybe some chicken  and it's a filling, healthy, delicious meal! Thanks for the idea!! Katy

These are great ideas.  I especially love the pizza ones.  My DB and I LOVE pizza so this is a great option.  Thanks for sharing.

You're smart and really resourceful!  My favorite at lunch time is to take two fat whole wheat pita pockets, put tomato and spinach (both raw) in between them, and have some really healthy thinly-sliced lunch meat and American cheese plus 1 tsp. of mayo.  I never get tired of this sandwich for lunch during the week.  It's messy to eat (like a dagwood sandwich), but I love it!  It's a way of getting my raw veggies in without having a salad (I dislike salads).
