I like to buy a big bag of the boneless skinless chicken tenderloins.  I take out what I need and the rest stay frozen.  You can cook them from frozen in only 1/2 hour.  I'm a quick and easy kinda gal.  Wait that didn't sound right.  Anyway because I don't like to fuss and make a mess I take a piece of tinfoil and put the chicken and any fresh veggies and seasonings you want into the foil.  Fold it up and place it in the oven at 375 for 30 minutes.  Yummy.  So quick and easy.  No pans to clean either.  A lot of times I will cook some chicken and make a southwest style salad with the lettuce, organic black beans, chicken, corn and whatever else you like on your salad.  Drizzle a little barbecue sauce and the low calorie french dressing and your good to go.  The beans help to make you feel fuller longer.  Don't stress over the weigh in.  I weigh on Monday myself.  We will succeed. Have a great weekend.

Not really a recipe, but those preseasoned chicken boobies from Perdue are awesome.  Just bake 'em and enjoy.

I love chicken!  I buy the boneless skinless chicken breast, throw about 8-10 in a gallon ziploc bag and then add a bottle of Fat Free Italian Dressing in to marinate over night.  The next day, I grill them and just freeze what I don't use.  It  is sooo simple and very yummy! Katy

i make a LOT of stir fry, mainly because i'm a volume eater so i can add lots of veggies without too many cals. they have tons of different marinades at the grocery store or whole foods or whatever. the consorzio 10-minute marinades are pretty good. you can also just marinade and bake or broil.  i also like to make "oven fried" using corn flake crumbs. take the chicken and dip it in something (egg substitute or yogurt)  then roll it around in the corn flake mixture, which i usually add italian seasoning/garlic powder whatever else in with it. you can buy "corn flake crumbs" in a box or for added crunchiness, you can just crush up special K to make your own. then just bake at 350 for awhile. this is good with pasta + tomato sauce. my mom will make parmigiana sort of using this chicken w/ tomkato sauce and low fat mozzarella. yum.
