I like to buy a big bag of the boneless skinless chicken tenderloins. I take out what I need and the rest stay frozen. You can cook them from frozen in only 1/2 hour. I'm a quick and easy kinda gal. Wait that didn't sound right. Anyway because I don't like to fuss and make a mess I take a piece of tinfoil and put the chicken and any fresh veggies and seasonings you want into the foil. Fold it up and place it in the oven at 375 for 30 minutes. Yummy. So quick and easy. No pans to clean either. A lot of times I will cook some chicken and make a southwest style salad with the lettuce, organic black beans, chicken, corn and whatever else you like on your salad. Drizzle a little barbecue sauce and the low calorie french dressing and your good to go. The beans help to make you feel fuller longer. Don't stress over the weigh in. I weigh on Monday myself.
