Sugar cookies with glaze

Ok guys so after spending all of last week baking for all of my friends and family (I made a total of 13 batches of regular full fat full sugar cookies and didn't touch ONE) I decided today to try a sugar free cookie recipie so I can have a little dessert with my family Sat and Tues (yes we have two parties this year) beyond my sf/ff fudge pops I've been having at functions.  Granted there is butter in the recipie, but up to 3 cookies is still within my sugar/fat content for a meal, so here ya go.  Both recipies were gotten off of Splenda's website.  Oh, and make sure the splenda is the regular granulated splenda, NOT the splenda blend for baking, that one contains a good amount of SUGAR in it.  The packets won't really work either - it is a different consistency. Sugar Cookies 3/4 cup unsalted butter 1/4 cup light butter 1 cup splenda no calorie sweetener, granulated 1 tablespoon vanilla 1/4 cup egg substitute 1/4 cup water 3/4 teaspoon vinegar (white or cider) 1 1/2 cups all purpose flour 1 1/2 cups cake flour 1/4 teaspoon salt 1 teaspoon baking powder 1)  Preheat oven to 350.  Lightly oil a cookie sheet and set aside (I did NOT oil mine - the butter in the recipie was plenty to have the cookies not stick) 2)  Blend together butters, splenda granulated sweetener and vanilla in a medium mixing bowl with an electric mixer, or by hand.  Blend until butter is softened.  Add egg substitute, water, and vinegar.  Mix briefly (At this point the batter wouldn't combine for me - it looked lumpy and yucky.  I was a bit concerned)  Add flours, salt, and baking powder.  Mix on low speed, until dough is formed.  Do not overmix. 3)  Remove dough from bowl and place on a floured work surface.  Divide dough in half.  Pat each half into a circle and cover with plastic wrap.  Refrigerated approx. 1 hour, allowing dough to chill. 4)  Remove dough from fridge and roll out on a floured work surface to desired thickness, app 1/4 inch.  Cut with cookie cutters.  Place cookies on prepared sheet. 5)  Bake in a preheated 350 degree oven 10-12 mins or lightly browned ont he back.  Cool on a wire rack. Nutrition info:  Based on 48 cookies, one cookie per serving: Calories 60 Protein 1gm Fat 3gm Calories from fat 30 Carbs:  7gm Fiber 0gm Cholesterol 10mg Sodium 30mg Sugar 0gm Sugar cookie glaze 1 1/2 cups splenda no calorie sweetener, granulated 1/4 cup cornstarch 5 teaspoons water Place splenda granualated sweetener and cornstarch in blender jar (I used my food processor)  Coer and blend until splenda is a very fine powder.  Pour into a small bowl.  Add water and stir well.  This recipie makes a thick glaze.  Add more water for a thinnger glaze.  (I also divided it and made it into different colors w/ food coloring  The batch does NOT make a whole lot, as the splenda and cornstarch kinda dissolve when you add the water.  I made a double batch - did have some left over but not a whole heck of a lot) Nutrition info per serving based on 5 servings: Calories 2 Calories from fat 0 Protein 0 Fat 0 Carbs 6gm Fiber 0 Cholesterol 0mg Sodium 0mg Sugar 0g Pam

Yes, I did. They were a bit thick (see instructions) and actually rose in the oven - so the texture was slightly more "cakey" than I like a sugar cookie - but certainly edible.  The glad hardened quickly - it's a little chewy but nice!  I may try altering the recipie next time and using all reg flour instead of half and half of cake flour, and I may cut down on the baking powder to prevent the rising.  Not to mention rolling it thinner. But it's a nice cookie that I can have three of them if I want.  I'm only 7 weeks out and would prefer to NOT get in the trap of eating sugar free but protein free snacks.  Because of that, they will be staying at my parents house once I leave tonight.
