PROTEIN...CAN IT BE FROZEN
Hi All:
I have a question concerning protein. I know that you can't heat protein past a certain temperature. Can you freeze it. There are a few recipes that call for protein but the entire recipe is too large for one sitting and would like to have it for other times. This is a recipe for a cold item so reheating is not required just defrosting.

i just googled if you can freeze protein -- and i'm sitting here like a moron and not finding what i'm looking for
BUT i work in a group home and i have seen people freeze milk -- and nothing happens to it -- we freeze meats and nothing happens to it -- there are many things that we throw in our own freezers and think nothing of it and it contains protein
so i would guess that if you made a recipe with protein in it -- either powder or liquid -- that it should be fine
don't know why i over-complicated this answer

Hope all is well with you. I have been following your progress and you are doing great. My concern about the protein is changing the chemical thing in it. You know how they say don't heat protein because at a certain temp, I think it 180 degrees, it changes the potency(?). Like you I freeze everything, but I don't want to make this recipe (powder protein) and then find out the protein is not going to be a counter.
Do you think our Nut. Jim would know?

In short, 151 to 160 deg F for 2 hours was only able to denature 20% of the whey protein.
Unless you are planning to boil your whey for hours on end.. it is not somethign I would worry about
As for freezing..
Whey is a milk by-product..
Simply..
