Any good recipes?

Hey ya'll.

I wanted to see if you ladies or gentleman had any recipes that you've used and just absolutely fell in love with.

I'm so looking forward to overhauling my old recipes.

Anything you can think of---Send it my way!

Oh, i'm back on full foods now (YAY!) and i've lost 62 lbs as of today(in less than 3 months)..I'm stoked!!!

Hi Joy,

Congratulations on moving forward to full foods. I have to tell you that I just love CookingLight.com for recipes. Of course, I focused on low-carb recipes when I was actively working on losing. 

The other night, when I was at a support group meeting a new member told me that she was so bored of chicken breast and cottage cheese, but said that she doesn't cook much and asked if I had any ideas. These are some that I gave her. She's single, so I suggested that she make these up and put some aside in ramekins or another type of single serving casserole dish. If you have a family that will eat them as well, you might not need or want to do that. 

'Enchilada' Casserole

Shredded roasted chicken (could substitute another slow-cooked meat)

Pico de Gallo (fresh salsa)

Beans (your choice)

Mexican cheese blend

Enchilada sauce

Mix the meat with 1/3 of the salsa.

Mix the beans with 1/3 of the salsa. 

Spray the casserole dish with Pam. Put some enchilada sauce in the bottom of the casserole dish. Add half of the chicken mixture. Add 1/3 of the cheese. Add the bean mixture.  Add the 2nd 1/3 portion of cheese. Add the rest of the chicken mixture. Drizzle enchilada sauce over the casserole. Top with remaining cheese. Pop in the oven at 350 until the cheese is bubbly and browned. To round out the meal, serve with sliced or chopped avacado and tomatoes mixed with remaining pico de gallo and a touch of lime. OLE!

 

I also gave a her a quick recipe for a Lasagna style casserole. Here's the recipe for that one. 

Ricotta Cheese

Basil Pesto

Low sugar spaghetti sauce

Trader Joes Quatro Formagio (or your favor Italian 4 cheese blend)

Cooked Italian Turkey Sausage (optional)

Barilla Pasta Plus (optional)

Spray the casserole dish with Pam. Mix the ricotta and a bit of basil pesto. Put a spoonful of spaghetti sauce in the bottom of the casserole dish. Add the cooked, crumbled sausage. Top with a bit of sauce. Sprinkle with Cheese. Add pasta. Add more sauce. Add Ricotta cheese/Pesto mixture. Drizzle a bit more sauce. Sprinkle with cheese. Bake at 350 until the cheese is browned and bubbly. I round this meal out with a salad of fresh spinach, some of the Quatro Formagio cheese, Tomatoes diced, finely diced red onions and some of Newman's Own Light Balsamic Vinegrette.

Hi Joy,   I am new to this forum I am Pre-Op for the RNY I am "about" 2 weeks out from my surgery date and meantime I have been researching for foods and excersises.   I found a REALLY NEAT site called PouchFriendly.com    I just personally found it, but it's recipes for those that have had the gastric bypass..   Look over there! I am sure you will find something you'll love!!  I have already found some neat ones to include protein shakes for my 2 week pre-op diet!!

Congratulations on your journey so far!  I remember I was desperate for full foods when they came around....Now the adventure really begins... Barb's suggests are great!  Mine were very similar at that phase but I also depended on a lot of stew-like WLS soups...Sullie seems to agree with those!  A couple great sites that you can find almost anything you are looking for made WLS friendly is

Because I love to cook, the first is my personal fav!!  I have made many of Michele's recp and they are delicious... The second is a couple of girls that have merged forces to create Bariatric Foodie, Pouch Party on Facebook... Have fun...But to save your sanity... I picked a good 6-7 recipes that I simply rotated around not to become too overwhelmed!  You are doing great!  Let us know what you decide to make and of course your review!   Happy cooking, eating!
