Monday Check-in
I don't know about everyone else, but for me, Monday comes a lot faster then Friday ever did!
There is never enough time to get everything done that needs to be done in the too short weekend. I was able to get outside to enjoy the weather yesterday. It was so nice not the have the breathtaking humidity and a nice breeze. I also experimented again in my kitchen with some protein pumpkin muffins. I used to love baking prior to WLS and since I do not tolerate neither sugar or flour, I thought my baking days were going to be limited. I have finally found some substitutions that just might work for all my old recipes and actually make them a lot healthier for everyone. I just need to see if they pass the test with my DH.
Today will be packed full of meetings at work. I will make a real effort to get in all my fluids and stick to my food plan.

Like you, i enjoyed the more favorable, moderate weather and hope that it holds through the fall. I'm ready to have the hot, humid weather behind us. Ben and I made trip to the farmer's market and picked up a few fresh goodies. I'm going to see about making another batch of Carolina Caviar with some blacked peas... mmmmm good, even if I do say so myself.
I hope that you will share your pumpkin muffin recipe, I love just about anything with pumpkin and 'tis the season.
Unfortunately, we had some disturbing news this weekend, Ben's mom had a bad cough when I went out there in June and has been being treated with multiple, significant courses of antibiotics without success. As a matter of fact she is getting worse and even though XRays and CAT scans aren't showing anything conclusive (neither did Dad's a few months before his death), they are concerned that Mom may also have the virulent and deadly small cell lung cancer that took Dad earlier this year. Dad had smoked like a train for decades, but had stopped smoking more than a decade ago, still the cancer stalked and killed him. They think that Mom may have the same thing and that it may be a result of second hand smoke. My heart is in my throat. My BIL is taking Mom to see a pulmonary specialist today and we pray for the best.

I've got a fresh pitcher of decaf tea brewed for home and at work. So I'm going to try and swill that all day. Even my morning coffee didn't qute do it fo me today.
