Tuesday check-in (Where is Everyone?)

Good Morning Everyone!

Thought I would just take up where I left off!    

How was your day yesterday?  Tell me about your holiday weekend.  What are your plans for today?

My sweet DH and I celebrated our anniversary with lunch at our favorite Mexican eatery yesterday afternoon.  We enjoyed  yummy shrimp and scallop fajitas.  Of course, we have a doggy bag with plenty so we can enjoy it again tonight for dinner.  Before lunch we rode our motorcycles and enjoyed the roadway before it got too busy.  It was time to take the bikes home when we continually saw police pulling vehicles over for speeding.  We grilled yogurt marinated chicken for dinner and just relaxed the rest of the evening.

Today it is back to work again.  I need to look into a yoga and/or pilates classes sometime during my day.

Yogurt marinated chicken? please tell me more about that. I would like to try it.

I have a real problem with chicken and pork.  On another board they spoke about a marinate with Greek yogurt.  So all I do is take my chicken pieces, a packet of Good Seasons dry dressing mix, large container of greek yogurt and place in ziplock bag.  I usually marinate overnight or at least the whole day, turning constantly in as I pass the fridge.  I have then baked or grilled the meat.  The skin does not get crispy, but I pull that off anyway.

I've tried the yogurt marinated chicken and it was very tender. I din't care for the peanut sauce that came with the recipe. I'll have to look and see if I can find it. Since it wasn't a smashing success I think I may have tossed it. Cleopatra Nik on the RNY forum page posts it occassionally.

Had a great weekend. Yesterday was my Mom's birthday. She turned 65. Since she has always supported me in anything and everything I've ever thought about doing - I bought her a great pair of New balance walking shoes and signed her up to walk the OBX 8k with me in November. What a great Birthday present.!!!! She absolutely loved it and talked my Aunt into doing it as well. Now both my sons are thinking that they want to do it with us as well.  (Betsy you've created a monster!!)

I can't wait to see the cardiologist this week. Hoping that he gives me the green light to start doing more as far as lifiting and using my left arm. I really want to start a yoga class that parks and rec is offering next week. Just got to get the docs approval first.

Thankfully we dodged a huge bullet from Hurricane Earl this past week. It was really nice to have the extra time off from work though. We always look forward to the 3 Day Labor Day weekend but this year we got out of work early on Thursday and closed Friday and Monday. It was WONDERFUL!!!! I feel rested and relaxed for a great start to cooler fall like weather.

I had surgery last Wed and came home on Friday.  So, most of my weekend was taking it easy and walking off this gas.  My Mom is hear from Kansas to help me out so I really have enjoyed her visit.  She returns home tomorrow and life with the DH and 2 boys (9 and 6) get back to some sort of normal. 

What did I eat?  Nothing yummy!  Having trouble getting in protein or fluids.  The thought of eating sounds disgusting but I am trying.  I feel so full and bloated after only an ounce of liquid.  Everything tastes weird.

Looking forward to meeting up with you all in person at the next Meetup .

Thanks! I googled "yogurt marinated chicken" and came up with some yummy sounding recipes- of Indian cuisine and the spices sound yummy! Martha Stewart and all recipes both have wonderful versions and I will have fun experimenting.

It's almost tomorrow as I stop by to check in. I worked in the temple office today as we get ready for High Holy Days... They are some of the busiest days of the Jewish calendar... Busy like Christmas and Easter are for Christians. People who never go to services, come for High Holy Days. Tonight we had a great 'Beck Group' meeting. After I left the meeting, I stopped at the grocery store on the way home, came home and made brownies for Sarah to take to school tomorrow and cleaned up the kitchen, then prepared a bunch of books to ship off in the mail. Finally, I'm able to get a few minutes to check email. 

I hope that work went well for you and look forward to seeing more of you and others.
