Good Morning Everyone!

Hope you all had a restful and relaxing weekend or at the very least an enjoyable one.

I had a wonderful weekend.  Although it was very warm and humid here in the Sandhills, I seemed to have a healing response to the warmth and sunshine.  I think I drank up as much vitamin D from the sunshine as my body could absorb.

Before my WLS I really hated any kind of lawn work, the last 2 years I actually look forward to mowing the grass and trimming my bushes.  I feel like an artist when I am out there. 

I woke this morning rearing to go!  It will probably last until 5 minutes after I get to the office, LOL!
I have a pot of chicken vegetable soup simmering on the stove and a protein pineapple casserole in the oven.  I made these to supplement my menu plan for my work week and to share with the ladies at work.  I bought some yummy cheese sticks and have several 200 calorie protein meals on hand, so I should be ready for this week with healthy food.

I have a car trunk full of different types of flavored waters so I should be well hydrated this week.

What are you plans for today?

Good Morning Annie!

Yes, I am loving life when it will allow me to.

This recipe is one of my favorites both pre-WLS and post-WLS.  Like every recipe I have, I just take the regular recipe and alter it for my picky pouch (no flour or sugar).

2 large cans of pineapple tidbits , Drain and reserve3 TBS juice  I use packed in its own juice
3 TBS flour    I use vanilla protein powder instead
1/2-1 C of shredded sharp cheddar cheese     I use 1C extra Sharp
1/2 C sugar          I use splenda or whey low
1/2 sleeve crushed Ritz crackers  
I have used Fiber One twigs, crushed
1/2 stick of butter or marg., melted   
I use Heart Smart

Mix pineapple, flour, cheese, sugar and reserved juice together in a bowl.  Transfer to a 2 qt casserole dish.  Top with crushed crackers and drizzle with butter.

Bake in oven on 350 for 30 minutes.

Sounds yummy to me.
I am loving my new way of cooking and find I do really well on whole grain stuff instead of bad carb stuff.
For lunch I had a small salad with some leftover chicken that I made for tacos last night.
I did not have the taco and felt very happy and content with the lettuce and cheese and some black beans.
I do the same kind of thing with pasta sauce I usally forgo the pasta and just have the sauce and up the veggies.

On my way to see my therapist but bought some Lactaid milk yesterday for my morning protien shake.
OMG I can hardly stand it.
I normally buy unsweetend soy milk but there was a crown. in front of the soy milk and I did not have time to wait so I bought the Lactaid.
I am finding I hardly stand sweet.
Other than that I am doing well.

Annie - I find that the Lactaid makes for good coffee creamer (maybe because it's sweet?).

Carrie - I haven't had Pineapple casserole in ages. I'd never realy thought about adding a little more protein to it or using protein powder in place of flour.....hmmmmmm......something to consider in other recipes.

I saw my surgeon (Dr. MacDonald in Greenville)  today. He will be doing my colonoscopy on May 19th. He said that as long as there are no other problems between now and then he was considering today as my  2 "surgiversary" appointment. Officially I've plateaued. I'm not good with that. He seemed to have no problems with it at all. He pointed out how much my health had improved and told me that my body had probably settled into it's happy spot. I hadn't considered my "ideal" weight to be anything other than somewhere in the happy Onderlands (150 - 175 range at that).  I've got to wrap myhead around this. Right this minute I feel like a WLS failure.

It just started raining here - which is fine with me it's suiting my mood at the moment. But not sure what that means for an evening walk. Guess I'll set up the DVD player in the bedroom and break out a new pilates DVD that I've been wanting to try.
