Happy Valentines Day! One thing about holidays there is always a lot of food around. Ive had numerous people comming to tell me about all the goodies that are around... Ive had people even trying to bring them to my desk... sheesh! One co-worker offered to eat 'my' cupcake for me... lol. I said sure go ahead! They are red velvet with cream cheese frosting - my favorite. Since its almost 11 all the office vultures should have circled and eaten them by now... *phew* I did succumb to 3 munchkin donuts from DD... man they were tasty. But thats it for me, no more treats today! I am proud to say I did pass by the boxes of girl scout cookies that were around.... it took people all damn DAY to eat the boxes... I held out! That swear the last damn carmel de lite winked at me and said 'eaaaaat meeee'.... but I wasnt listening!

It is hard to fight temptation when there is red velvet around!  Girl I am so proud of you! I love the Samoa GS Cookies.  They are LOADED with sugar.  I was going to have one last night, but changed my mind when I looked at the label.  :) My students have been quite nice today.  They have brougth me SF candy and roses.  :)

Good for you Jennifer, After all you have accomplished it is not worth a girl scout cookie. I gave lee 3 bags of reese cups today and yeah they looked at me and I looked at them but it just is not worth it to me anymore. I did take a bit of  lime curd today while I was making the mini phyillo pie shells for my party. I may have two mini lemon pies tonight with rasberries and that will be satisfing for me.                                        Annie

Annie, tell me more about this lemon and lime curd you are eating.  Is it like yogurt made into cheese?  Sounds like something I would like.  I miss my goat cheeses!  Today was a rough day at work for me as well.  The theme was "sweet incentives" and there was candy EVERYWHERE!!!!  I did eat a handful of m&ms and a few gummy bears.  But overall I did ok.

Sounds like you are doing well with temptation Suzanne. The lemon curd and the lime I buy it at HT in the jam and jelly section. I am and avid label reader so make sure you get the ones with the lowest sugar amount. I admit the lime gave me a sorta sicky feeling I do better with the lemon. I buy the mini phyllo shells and place one rasberry in the cup and cover the berry with lemon curd. I learned that making these little pies your head feels like it has had pie and I find it very satisfing. I do not eat this all the time but the first few I made I had to test out before the party. I would imagine SF pudding would be something good to use in the shells also. Since I love lime with a passion I am thinking about mixing some FF cream cheese with a few teaspoonfuls of lime curd. By doing this I would think it would be like a cheesecake type of treat. I learned about using the mini shells from the cooking class I went too last month. The teacher had RNY about a year ago and is a chef at a bed and breakfast. I love goat cheese also and bought some a few weeks ago and mixed it with FF cream cheese to make it spreadable and stretch it. I have used the FF cream cheese in many things and have not had any trouble with it.                                                        Annie

Thanks Annie!  I may have to try that, but I also have a recipe for making a sort of sweet cheesy spread out of yogurt that sounds similar to what you are describing...  could be good!  Don't see why I couldn't make it with splenda...  also thought about mixing with ff cream cheese as well...  I sure do love phyllo!  Thanks for the ideas!

It's great to come here and read that others are fighting the good fight against pies and cakes and cookies and whatnot as well.   And succeeding!  Without your words, it would be a LOT harder for me to fight temptation.   I'm just white-knuckling it through today, one hour at a time.  Thanks for helping me make it through THIS hour!

With 6 of us in the office that all love to cook I thought it would be hard so I planned ahead. I'm still pre-op so I had a little wiggle room but I'm trying to hard to make permanent changes. I made a trail mix last night using Kashi cereal, some nuts, a handful of raisins and some semi-sweet chips. Seems like everyone here likes my healthy alternatives and I won't be taking any home since there's none left.  Oh yeah - I'm getting my hair cut and colored tonight so I've zoned in on that when I wasn't busy today. - Iris
