Adapted From Hungry-Girl.com  (This site is focused on WW Points, but still some goodies for us.) OLD VERSION NUTS Serving Size: 5 wings (a typical serving) Calories: 510 Fat: 28g Sodium: 2,135mg Carbs: 35g Fiber: 2g Sugars: 1g Protein: 28g POINTS® value 12* NEW VERSION * 8 oz. raw boneless skinless lean chicken breast, cut into 10 nugget-shaped pieces * 1/4 cup Fiber One bran cereal (original), ground to a breadcrumb-like consistency in a blender or food processor * 1 oz. (about 14 crisps) Pringles Light Fat Free Potato Crisps, Barbecue (or another fat-free BBQ-flavored potato chip) * 3 tbsp. hot pepper sauce (like Tabasco) * dash onion powder * dash garlic powder * dash cayenne pepper * dash black pepper * dash salt Directions: Preheat oven to 375 degrees. Crush potato crisps completely and, in a small dish, mix with cereal crumbs. Add a dash of each of the seasonings and mix well. Place chicken pieces in a separate dish, and cover and toss with Frank's RedHot. Spray a baking pan with nonstick spray. Give each chicken piece a shake (so it's not dripping with RedHot), and then coat it evenly with the crumb mixture. Lay the battered nuggets on the baking pan. Place in the oven, and bake for 10 minutes. Then flip the wings over, and return them to the oven for 10 more minutes, or until outsides are crispy and chicken is cooked throughout. Thanks for posting the recipie :-) I always check them out for ideas! However, with this one I wanted to give a word of 'warning' about the FF Pringles - they are made with olestra. Olestra, as many of you know, can cause a laxative effect on some (sometimes you have to eat a lot for it to happen). Olestra causes people to malabsorb certain vitamins... they add the vitamins back into the food to make up for this fact. There is NO scientific proof that by adding them back it 'makes up' for the malabsorption that olestra causes. They have also been unable to determine what a safe amount of olestra can be consumed... basically it may not be safe at all. Makes me concerned for us RNY people that are already malabsorbing... I would assume any olestra products wouldnt be the best idea!  I personally dont use many FF products and go for lower fat... I would suggest using a different chip in this recipe :-)   You could always use Shake N Bake... while its enriched (boo hiss!) you can put buffalo sauce on the chicken breast THEN dredge thru the shake n bake... it makes the chicken really moist and tasty... I use franks red hot, franks red hot buffalo wing sauce, or stolen packages of ChikFilas buffalo sauce :-) Im sure by using the potato chips it makes it more crunchy thou!
