Annie, Read your note about going to Red Lotus.  I've never been there but I imagine the lettuce wrap recipe is similar to what I brought to the Christmas party and posted afterwards, except those had ground pork.  Use that and just sub ground chicken/turkey or one of these recipes! Chicken Lettuce Wraps by Joanne Weir from Weir Cooking in the City
2 tablespoons peanut oil
1 pound   ground dark meat chicken
8   scallions, white and green parts, minced
2 teaspoons   cornstarch
2/3 cup   water chestnuts, chopped
3 tablespoons   soy sauce
1 tablespoon   grated fresh ginger
1 tablespoon oyster sauce
1 large head butter lettuce, leaves separated

1. Warm the oil in a skillet or wok over medium-high heat.

2. Add the chicken, scallions and cornstarch and cook, stirring constantly the chicken is cooked and broken into pieces, 3 to 4 minutes.

3. Add the water chestnuts, soy sauce, ginger, and oyster sauce and cook for 1 minute. Remove from the heat.

4. To serve, take 1 lettuce leaf at a time and spoon a heaping tablespoon of the chicken mixture into the center. Wrap the lettuce around the filling. Serve.

2 cups, 4 handfuls, fresh shiitake mushrooms 1 1/3 to 1 1/2 pounds thin cut chicken breast or chicken tenders 2 tablespoons light colored oil, such as vegetable oil or peanut oil Coarse salt and coarse black pepper 3 cloves garlic, chopped 1 inch ginger root, finely chopped or grated, optional 1 orange, zested 1/2 red bell pepper, diced small 1 small tin, 6 to 8 ounces, sliced water chestnuts, drained and chopped 3 scallions, chopped 3 tablespoons hoisin, Chinese barbecue sauce, available on Asian foods aisle of market 1/2 large head iceberg lettuce, core removed, head quartered Wedges of navel orange -- platter garnish

 

Remove tough stems from mushrooms and brush with damp towel to clean, Slice mushrooms. Chop chicken into small pieces.

Preheat a large skillet or wok to high.

Add oil to hot pan. Add chicken to the pan and sear meat by stir frying a minute or 2. Add mushrooms and cook another minute or two. Add salt and pepper to season, then garlic and ginger. Cook a minute more. Grate zest into pan, add bell pepper bits, chopped water chestnuts and scallions. Cook another minute, continuing to stir fry mixture. Add hoisin Chinese barbecue sauce and toss to coat the mixture evenly. Transfer the hot chopped barbecued chicken to serving platter and pile the quartered wedges of crisp iceberg lettuce along side. Add wedged oranges to platter to garnish. To eat, pile spoonfuls into lettuce leaves, wrapping lettuce around fillings and squeeze an orange wedge over.

INGREDIENTS

·         16 Boston Bibb or butter lettuce leaves

·         1 pound lean ground beef (OR chicken/pork/turkey) 

·         1 tablespoon cooking oil

·         1 large onion, chopped

·         2 cloves fresh garlic, minced

·         1 tablespoon soy sauce

·         1/4 cup hoisin sauce

·         2 teaspoons minced pickled ginger

·         1 tablespoon rice wine vinegar

·         Asian chile pepper sauce (optional)

·         1 (8 ounce) can water chestnuts, drained and finely chopped

·         1 bunch green onions, chopped

·         2 teaspoons Asian (dark) sesame oil

DIRECTIONS

1.      Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.

2.      In a medium skillet over high heat, brown the ground beef in 1 tablespoon of oil, stirring often and reducing the heat to medium, if necessary. Drain, and set aside to cool. Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger, vinegar, and chile pepper sauce to the onions, and stir. Stir in chopped water chestnuts, green onions, and sesame oil, and continue cooking until the onions just begin to wilt, about 2 minutes.

3.      Arrange lettuce leaves around the outer edge of a large serving platter, and pile meat mixture in the center. To serve, allow each person to spoon a portion of the meat into a lettuce leaf. Wrap the lettuce around the meat like a burrito, and enjoy!

4.      Total Fat: 22.3g  (this appears a little high to me... might be a miscalculation)

5.      Cholesterol: 69mg

6.      Sodium: 623mg

7.      Total Carbs: 24.1g (I think this is wrong also)

8.          Dietary Fiber: 4.8g

9.      Protein: 23.4g

Thanks Wendy, I thought about what you brought to the xmas party and it looked very much like what I ordered. OMG look at the protien that is great. I love butter crunch lettuce the best. Of course I wasent able to eat the whole thing and had the left overs for a snack yesterday. I never thought I would love lettuce wraps but I am hooked now and the chicken was ground so it was very gastric by pass friendly for me.                                            Annie
