SOUP!!!!!!
We had company this weekend and my son grilled sirloin steaks on the grill. Grandma fixed green beans and mashed potatoes. I bought the squash casserole from Black Eyed Pea. Lunch was good------but the best part was the soup I made afterwards! I dumped a can of diced tomatoes in the pan, cut up the cooked sirloin in small pieces, added the green beans, about a cup of the mashed potatoes and about a cup of the squash casserole, then threw in frozen corn for color! I let it simmer for about two hours..OMG, it's great! I put the left overs in 3-4 oz containers. I pack one for lunch everyday and another one for a snack. I think this is good----since, I'm getting in more vegetables this way. My other snack of the day, I usually eat diced pears or applesauce. I've starting buying a large iced tea around 8:30am at work and it last most of the day. I have water on the side if I want change! Take care, Cathy Fowler
Hey Cathy
The steak part sounds yummy.. I have so many problems with chewing food that I will probably have to puree my steak to eat it... Think that I was use to shoveling my food down as fast as I could.. And now I have to spend soooo much time with each bite.. Oh well.. My dream is to have a yummy filet minon maranated and then cooked on the barbacue until it is just perfect .... What a dreamer huh.. I also eat a lot of lite applesause.. It's a "easy keeper" I do the pears on my cottage cheese. I'm really into fruit, just wish I had a better choice on the fresh fruit..
