Oh no! Why did I have to do it???
I was craving spicy so I roasted a red pepper, topped part of it with a little shredded mozzarella, and put a drip of Emeril's lemon garlic rosemary dressing on it. Nuked it to melt the cheese and I was in HEAVEN. The mozz was an issue cause it was so chewy, but I'm glad I did it, my teeth were feeling lonely. Maybe next time I'll use ricotta, since I still have more than half of a roasted pepper in the fridge.
