Do you guys think 1 brat or small hamburger with 1/2 a bun is 2 much at 6 months out (almost)?

Not really but go slow on new food .... any sneezing or runny nose STOP immediately.

I agree with Nate, but a nice grilled chicken would be better. Maybe even without the bun.

I've found some really great chicken based alternatives for sausages and burgers.  If you're a Costco shopper, they have a brand named amylou that is very tasty.  I would avoid the regular buns.  Try slimwiches or other thin bread.  I also eat my sausages and burgers on flatouts or tortillas.  The regualr pork and beef based may still be too fatty, I know they are for me at least.
