Pureed Stage???
I wasn't able to eat much at first, probably a few tablespoonsful. I know you have been reminded, but at the risk of sounding like a broken record: small bites, chew it well - you may want to avoid salsa at first if it has any pieces of onion or tomato. Tomato is probably Ok, but the onion and peppers will be hard to chew (or at least I find them hard to chew and difficult to tell if they are not). I had problems with even soft food getting stuck and long pieces (like onions) would be an issue for me.
I'm probably not a good one to give dietary advice since I did a lot of yogurt, mashed potatoes and gravy (prolly not a great choice, but it went down), and oatmeal for the first several months due to strictures. I still eat a lot of soup and cottage cheese - they seem to be my new comfort food.

I did the ricotta or cottage cheese with marinara. It was sooo good. I also mixed in some Unjury Unflavored to get some extra protein.
I did a few table spoons and added a spoonful of sauce. You can always mix up a little more if you tolerate it well and want a little more.
Also did mashed potatoes with gravy and protein powder.

I'm in the same stage that you are in.. My diet sheet didn't mention the ricotta, but I was wondering, What do u do mix the ricotta together with salsa or marinara?? Sorry i've just never heard of that one before, but i'd like to try it. I did try the mashed potatoes with gravy today, i made the potatoes really soupy like with very little gravy, it was VERY GOOD and Filling, I couldn't eat too much of it tho. My diet also says that I can have grits, maybei 'll try some of those for breakfast.
Here is what I did for what seemed like weeks (oh wait it was weeks!).
Small tub of Low Fat Ricotta
1 Egg
Grated Parmesean Cheese (The stuff that is almost like dust)
Mrs Dash Seasoning (Tomator, Garlic and Basil)
Grated Cheese.
Mix the Egg and ricotta and seasoning along with 1-2 cups of the parmesean in a bowl.
In a small baking dish spread half the mixture.
Put some Tomato sauce and then grated cheese.
Add rest of mixture.
Cook on 375 for approx 45 minutes. Top should start to brown and a knife should come out clean when placed in the middle. Add more cheese on top and coo****il melted.
A key tip with the cheese on top is that you want it to get almost brown as most melted cheeses will lump when you chew them but if you take just pas melted they get easier to chew.

Fish cakes (Pouches of Salmon add egg and parm from above to help bind) You have to play with this one to get it right.

Paul's recipe sounds amazing and I am definately going to try it! But I have been going the easy route and just putting 1/2 cup of ricotta cheese in a little baking dish and pouring a thin layer of no meat spaghetti sauce on top and then either putting it in the oven on 375 degrees for about 10-15 minutes or if I take it to work I just put it in the micro for a minute. Very delicious and satisfying!

Wow , thanks Paul for that recipe, sure does sound tasty and filling. I could eat grits alone for the rest of my life, i'm from Georgia and thats what we love, grits with cheese. So the grits would only be a problem if i could never have them again in my life .lol. Paul i will be trying this recipe on friday. at the end of my two weeks. thanks a million
