Quinoa--the magical food
All right, it's not really magical but it's a good substitute for rice, couscus, or even pasta. It's used for protein by vegans and vegetarians and has a complete set of amino acids. Refer to Wikepedia for more infp.
My wife cooked it for the first time tonight. She complained about how much work was involved. After looking at Wikopedia, I realize that nest time we will be better off using pre-rinsed quinoa. The problem with rinsing raw quinoa is that it is a seed and is quite small. My wife said it goes right through the holes in a colander. If you get it raw, rinse it in cheesecloth.
Now, the question is how does it taste? Like rice or couscous, it doesn't have much of a taste of its own. My wife mad a casserole with chopped peppers, tomato, and leeks with cheese. It still didn't tast much like anything. I had her heat up some tomato sauce and it was great.
Note, I often have trouble digesting rice but had no trouble with the quinoa. It feels light. Those of you who are looking for something to accompany your meals will probably enjoy this. Next time, my wife is going to make lasagna using the quinoa instead of pasta. You layer ground meat, cheese, and the quinoa.

Since we made more than we needed for one meal, I've been having leftover quinoa casserole either alone or with another protein as part of my breakfast. For flavor, I've been adding Walden Farms SS/FF/calorie free sauces or salad dressing. I know the salad dressing sounds odd, but it works well on nuked items. I get the Walden Farms products from www.netrition.com , but they're available at other online sites and in some grocery stores--probably with diabetic or diet foods.
If it tastes that bland, sounds like it would be easier to cook "spaghetti squash" in place of it, pasta or rice .. Have you guys ever done that trick?
You cut a sp. squash in half, put the halves upside down on a cookie sheet and bake for 1/2 hour or so at med heat .. You then carefully "fork out" the insides of the halves .. The stuff that comes out looks just like linguine noodles and has about the same texture .. You then use the "noodles" as you would in any other recipe .. They only tend to taste like whatever flavor they are mixed with, though . Not bad ..

We're really talking about two different things. I do love spaghetti squash and usually have it in season. Quinoa is available year round and can be substituted for pasta or rice. It is much richer in protein and other nutrients.
I've been on the OH boards for almost 10 years and every year several people bring up the advantages of integrating quinoa into your diet. I may have put it in a poor light by posting after only having it for the first time. However, I do want to have more of it. Besides, there are hundreds of recipes for it on the internet. It's a good protein source for vegetarians.
