honestly dude at a month out, eat what you can tolerate. I'm sure the amount of carbs you eat in a potato (at this point of your post op life) will be minimum because you probably can't eat more then 1/2.
I stayed VERY low carb for most of my early post op life, because I wanted to lose weight fast. I stayed a carb nazis till just about the time I got to goal.

I will have a baked potato when I go out because I can control the amount of fat I add, not knowing how much stuff they've stirred into the mashed taters. Usually eat about a fourth to a third of it and take the rest home for future meals. I'm not anxious to dump if I can help it, so I NEVER use butter on it - but I will cover the tines of my fork lightly with the sour cream on about half the bites, if that many. Never use more than about an ounce of sour cream, if that much. It's really amazing that, if you give it a try for a few times, how you can get by without the taste of the added fat - calories that none of us need.
