So, going in for the scope next week and was curious, can the Endoscopy see as far as the pacrease and gallbladder and all that???

Takes an ultrasound to look at those without cutting you open.  

Suggest you look at some basic anatomy material.

To clarify, the SCOPE cannot see the gallbladder or the pancreas.  However, injection into ducts of the biliary tree can allow the pancreas and gallbladder to be seen via x-ray.
