Wednesday Coffee Talk
Good Wednesday morning everyone! Sure did miss you all yesterday! I appreciate you thinking about me. The myelogram? Well, lets just say that Randall will not have one again! SHESH! Today is going to be a better day. I just KNOW it! Not only for me, but for you as well.
Our challenge for today is to just breathe. We all get to the point that we feel overwhelmed by things in life. Work, stress, bills, kids, education, many things make us feel like we can't take anymore. If you will just take a few steps back, mentally AND physically and look at the picture as a whole, it will give you a minute to breathe and to look at things in a whole new light. Things aren't worth the "smothering" that life brings. Life can take the life out of you if you let it. You are stronger than that. Just breathe! I know you can do it! I have faith in YOU!
So, who's up? What cha sippin' on this morning? Me? I'm enjoying some Folgers this morning and I have made a Cappuccino cake also, so I had a piece of it for b'fast. I have Lucy some ready to grab as she heads out the door for work this a.m. I've included the recipe to it because Elle had asked for it. Feel free to make it and enjoy it. I used Splenda so it isn't that bad. HA! Sure is good with coffee too!

Randall's Cappuccino Cake
3 cups of sifted flour 6 eggs 4 ounces of cream cheese 3 cups of splenda for baking 2 squares unsweetened chocolate bars 2 cups of 2% milk 1 cup of oil 2 cups of cappuccino mix (I use the kind you put in coffee from International Foods but S/F) 4 ounces of sour cream Preheat oven to 350*. Sift dry ingredients into large mixing bowl. Add eggs one at a time mixing well. Add oil, cream cheese, sour cream, oil, and milk. Melt chocolate in microwave just until soft enough to mix. Mix all together well. Spray bundt pan LIBERALLY with non stick cooking spray. Pour batter into pan and bake for 50 minutes. LET COOL COMPLETELY!! Turn out of pan and flip. Eat and enjoy

Good morning. We were just on a small island. Isle of Rotan. We took a cruise and spent 2 days there. I sure did love it and if I could (or we, my wife agrees too) we would be Missionaries there. We saw the most amazing things there. Being from South Alabama (north now), my mind had never imagined the things. Living conditions and beauty too.

OH WOW! The diving there is awesome! I like it there too. You're right, too far and too expensive also, for a vacation home. I have never seen coral like the coral there. They don't even want you to touch it when you are diving as that kills it. I don't blame them though.
