Speaking of chili (recipe request)...
I am going to guestimate on mine now, I am at work and dont have the recipe with me.
I have a big crock pot, and I put it on low and cook for 11 hours. It makes the house smell amazing
2.5 lbs lean beef
2 cans kidney beans
1 can canneloni beans
2 green bell peppers
1 whole onion
3 cloves of garlic
a few smaller and hotter peppers
spices, spices and more spices including
some ground cumin
chili powder
seasoning salt
2 medium cans of diced tomatoes
2 big cans of tomato sauce
PEPPER
hot sauce (franks and tobasco both)
1 carrot
dice the onion nicely. Cut the peppers up well.
I believe the word is juilann the carrot (cut into small strips)
Pour the sauce in the crock pot and turn it on. Add the diced tomatoes and the beans
sweat the onions and garlic together and put in the crockpot
Add the peppers and everything else but the beef
brown the beef on a med flame, then drain well and add.
cook the crap out of it on low for 11 hours. Stir occationally.
It comes out great and I package it in small packages and add cheese and eat at work. Tons of protein, no crap cause I made it and its not fast food, and its pretty good too.
ALl you have to do to make your own is find a recipe and try it . Thats how I did it.

2 teaspoons Cumin powder
3 tablespoons Chili powder
1 1/2 teaspoon Black pepper
2 teaspoons Salt
2 cups Water
Brown the ground beef and onions together. Drain and add to crockpot. Add all the other ingredients to crockpot/slow cooker. Let it simmer all day.
I personally use the canned green chili - half of a 4oz can. I also use canned diced tomatoes instead of fresh. The last time I made a pot I didn't have pinto beans, so I substituted black beans and it was great. Sometimes I also substitute the ground beef with ground turkey to cut back on fat content.
Here is a whole bunch of competition chili recipies without beans.

If you want to get some of the specialized chili powers I like to go to Pendery's.

If you ask for a paper cataloge you get a lot more detail on spice characteristics and where best used.
Chili's an awesome food for us WLS people! Good protein source...tastes like you're cheating.. and it goes down easy. Truthfully though.. I got a little burned-out on Wendy's chili because I ate so much of it when I started solid foods. I'll still go back to it I'm sure.. but it's not at the top of my list anymore! Even homemade chili at the Fire Station is not a big turn-on anymore. Guess I'm chillie'd -out!!
