easy packed breakfast
Being a commuter, I am always looking for something healthy to pack along for breakfast. A long time ago I went to a (total nut job) doctor to help loose weight. Other than being offensive, abusive, and a complete waste of medical knowledge, he did pass on a great breakfast idea to me. I ate it this morning, and thought I'd pass it along to y'all.
1 hard boiled egg
1 small can spinach (7.75 oz)
1 slice hearty whole grain bread (not the cheap crap)
This is so handy to pack along. I peeled the egg before I left, and made sure to get the Del Monte can with the pull-top opening. I love spinach, so I don't reheat it at all. Just put a little s/p on the egg, vinegar in the can of spinach, and enjoy. Sometimes I slice up the egg and put it on the toast.
It fills me up, but not overdoing it. I ate it at 6:30 this morning, which was 3.5 hours ago. I noticed that the nutrient combo of the simple and complex carbs from the bread and the spinach woke me up, while the egg kept me going all morning.

I like spinach. But not cold. And not with eggs either.
I'm gonna stick to my morning of scrambled eggs, refried beans, and strips of ham.
Of course I only live about 3 minutes from where I work.
