"Quinoa"...not bad..
Welll....the wife and I tried "Quinoa" yesterday and I have to admit it was pretty good. I took 1 cup of "Swanson's" beef broth, chopped onions, garlic & herb and pepper. Brought it to a boil and added a 1/2 cup of "Quinoa". Brought it back to a boil (let it boil for about a munite more) then covered it and let it cook on low (because it was still boiling) for about 12 munites and then took the lid off and fluffed it. Put the lid back on and let it sit for about 15 munites and served it with beef. I was pleasantly surprised...it was good. I have always loved to cook. You could add frozen peas or anything to it and it makes a great side di**** sort of tasted like the fried brown rice you get when you order Chinese. I even added a few drops of "soy sause" to it and it was great. We plan on having it as a side dish more often.

Most any grocery store carries it anymore, at least in cities/suburbs. Look either around the rice, or around where they sell specialty flours and grains in the baking aisle. Another place to look is in the natural foods area, if the store has one of those.
I really like this stuff. I saw seeds at the garden center last week, and bought four packages to grow my own this summer. It's just a weed, really, should be easy to grow.
I've been using Quinoa and Amaranth which are both cereal grains with very high proteins for the last year too. Both are known as "Ancient Grains" Google it, it's interesting. These grains were staples in centuries past. They both can be cooked and used like rice or as cereals (like cream of wheat, oatmeal, etc....) They are available online from a number of sources. The one downside is that they are not processed as well as commercial grains like rice and can have a bit of "grit" in them. All in all though they are a really good source of protein for us WLS'ers.
